Cursed

Today flew by. I didn’t even really do anything- went for a run, showered, did some Sanitation and Safety reading, and then it was time to leave for class. I thought that the rail ran every 10 minutes, but apparently that is WRONG… so I had to drive downtown for class so I wouldn’t be late (no reading time on the train :( BOOO).

I had a delicious sandwich for lunch: smoked salmon, baby spinach, capers and goat cheese on an Ezekiel bun. YUM. Along with grape tomatoes and some baked tortilla chips:

And for dessert? Pumpkin Kisses, naturellement.

Soooo I missed last week because of Labor Day, but we’re back to SLOW COOKER MONDAYS!!! I found this recipe from Cooking Light for Curried Squash and Apple Soup.

The soup is delicious. It needed a little more salt than the recipe called for, but other than that it was great- just slightly sweet and very filling. I cooked it in the crock pot on high for 4 hours (set the timer) and then pureed it with my new toy: the immersion blender :) We topped it with sour cream because Target was out of Fage.

Alongside we have a simple turkey (roasted… smoked turkey is gross) sandwich on whole wheat with spinach, pickled jalapenos, sweet pickle slices, light mayo and Vivi’s Carnival Mustard. Yum yum yum.

Here’s the thing- I think I’m cursed right now. I’ve never been what one might call graceful, but in the past two weeks I have:

  • Broken my toe
  • Spilled coffee all over my grandmother
  • Ran into the wall while trying to hurtle over a Chloe gate (kind of like a baby gate, except that we don’t have a baby. We have a pug…)
  • Dumped my very delicious frozen yogurt all over the floor of the yogurt store
  • There are more but I can’t think of them right now.

And now, today, I basically hacked open my thumb while trying to cut up a butternut squash for the soup. I even watched a video online on how to slice a squash, after having this happen back in April, the last time I tackled one. UGH. I was using my super sharp 10″ chef’s knife (that I NEVER use… apparently with good reason) and the thing would not stop bleeding. It was gross. That’s actually why I missed the train- I figured that it would be both uncool and ironic to show up to a Sanitation & Safety class while gushing blood.

So those of you who see me on a regular basis: WATCH OUT. Don’t say I didn’t warn you.

    Ahh slow cooker Mondays sound fabulous! I have a crock pot and I fully intend to use it as much as possible this fall and winter!

    But seriously, I’m sorry about your thumb :( I hope that you picked a super cool band-aid (I’m talking Care Bears or Dora the Explorer) to help it heal!

    Oh my goodness! Coffee on grandma? That sounds like a burn… ouch! I am definitely staying away… haha.

    Slow cookers! Ah, I need to get back into it. The problem is either Bill or I are gone from the house for at least 8 hours – so things always burn. Any tips?

  4. That soup looks really good! My mom has a crock pot, but I’ve never used it. I should give it a whirl.

    Sorry about your knife incident. I hate when that happens to me. :(

    Foodie- I bought a cheapy Oster (this one: http://tiny.cc/liPUq). It’s about $25.

    Bender- Nope, just a boring brown band-aid. Sad :( I like the ones that look like tattoos…

    Rose- A lot of the recipes I’ve seen cook on low for 8 hours, and you can set the timer so that it will switch to warm. Just make sure you have enough liquid in there! I’ve burned steel cut oats in it before and it is NASTY.

    Oh, and Grandma’s fine- she’s swift for her age :)

    Heather/Rose- OH, and give the crock pot liners a shot. They rock.

    I saw the soup recipe and thought it looked like a good one. I will definitely try it out! I love having reviews before making a new recipe. Thanks!
