At the moment, this is pretty much what I look like:
Sorry, Chloe. She’s less than amused by my picture-taking. But apparently not annoyed enough to actually get up.
Today was all about the baking. Tomorrow I’m catering desserts for a reception at my former company, so today I made 150 cookie truffles:
And just under 100 key lime tartlet shells. I still have a few left to bake:
The cookie truffles are ridiculously easy to make. You just crush a package of Oreo’s in the food processor, mix them with cream cheese and vanilla and roll them into balls. Then chill until firm and dip into melted chocolate.
I made tarts in class this summer, but tartlets are a massive pain in the butt. The dough recipe is here- you were supposed to be able to roll out and cut the dough, but mine just fell apart. So instead I just pressed them into tartlet pans and weighed each down with pie weights.
Tomorrow I’ll fill the tartlet shells with key lime filling (recipe from one of the Magnolia Bakery cookbooks… I can’t remember which one, but it’s fabulous).
And THANK YOU THANK YOU THANK YOU to my mom and Brian. Mom helped me pretty much all day, and Brian is actually doing the ginormous pile of dishes right now. I’d also like to point out what he did with the leftover melted chocolate:
NICE. That’s a cookie under there, if you can’t tell.
Okay, gotta be up at 5 to babysit- soooo I’m out.
SURVEY TIME!!!
What’s your vice/guilty pleasure?
I have a few: Perez Hilton, Cherry Coke Zero, magazines and trashy TV (hello, Wife Swap!).

Not a bad idea melting the chocolate onto a cookie. You could make that a Heather (well a Brian) specialty! I guess I have similar guilty pleasures i.e. Perez and trashy TV. I’ve been good at letting go of the diet coke though. Have a great time catering.
I am so in love with pugs now – I am so tempted to ask my huz for one – just what I need, another baby : )
I love the cookie truffles – I might have to steal that one. I know it is a lot of work but I would so love that to be my job.
I used to drink way to much diet soda – thank goodness I kicked that stuff. Let me just say that artificial sweeteners cause serious bloating and tummy trouble. Trashy TV – I am guilty – The Girls Next Door – my FAV.
omg i was dying at those chloe pictures!! i need to get me a pup
great looking truffles!! i’m glad you didn’t waste the leftover chocolate
Holy chocolate!! Props to Mom and Brian for helping you out
Guilty Pleasures: Tabatha’s Takeover and fudgebars
mmm…those look so yummy! My gulity pleasure is Facebook! I’m in ALL THE TIME! ha!
I still feel ill today from all the chocolate I ate last night.
My guilty pleasures are action movies (“Shoot Em’ Up” anyone?), corn dogs, and Cheerwine (very hard to find in Texas).
Oh wow! I can’t believe those are so easy. They look very fancy. My guilty pleasure – trail mix, the Hills, Real Housewives, Rachel Zoe…and getting my head rubbed.
IT FEELS AMAZING.
Girl, you need to let me come over so I can show you how to use that dremmel!
I CAN’T WAIT TO SAMPLE YOUR DESSERTS TODAY!
WOO HOO!!!!!!!!!!!!!!!!!!
UMmm can you say YUM! I can’t wait to try them, they look amazing! My guilty pleasures include: passive agressivly not letting people in my lane who know their lane is going to end but want to speed ahead rather than get in line like they should, Perez, spying on MySpace, painting my nails sometimes multiple times in the span of a few days, once in a while eating a REALLY bad junk food all alone (like one of Chad’s Cherry Pies that has abotu 350 calories a pop)….hmm it seems I have more than a few guilty pleasures. Crap, and those are just the ones I am willingly sharing.
My guilty pleasure is pop music. I’m a classically trained pianist and somewhat of a music snob. But, I just love trashy, slutty pop music a la Britney Spears (seen her in concert twice) and the Pussycat Dolls. It’s not that I think the music has any quality to it, it’s just fun to listen to.
A couple of very random comments…
1. My husband just told me about a new Horizon milk that is fortified with Omega-3! Now, when your yummy dessert recipes call for milk, you can brag that they are packed with vitamins and nutrients too!
2. I was wondering if you could do a review on the Amy’s Samosa Wraps (freezer section of the grocery store).
Oh, and my guilty pleasure is The Hills. I don’t know what it is….it’s so horrible. Horribly addictive.
Sammie/Hangry Heather- I know, the diet coke thing is BAD. I really need to cut myself off… so have y’all sworn off caffeine in general or do you still drink coffee?
Rose- I haven’t watched Tabitha’s Takeover yet… looks like I may have to add that to my to-watch list.
Thelions- OHHH, facebook- I didn’t even consider that. Crap.
Mandy- Hey! I’m going to have to look for that milk. I’m obsessed with Horizon milk because it lasts FOREVER. And yes, I will most definitely do a review of those samosas… anything that necessitates a Whole Foods trip is great by me
Kat and Cindy- see you soon!
OH, and Bri- Cheerwine = disgusting. If they start selling that crap in TX then we may have to move.
I can just picture you and Gina in the kitchen with chef hats on.
Those desserts look amazing! I think Brian actually showed a lot of restraint.
My guilty pleasure is Diet Coke. Can’t.stop. ONE on my desk right now. Chloe makes me want a dog. too cute!
Heather, you bite your tongue! Cheerwine is the drink of the gods! It laughs in Cherry Coke Zero’s general direction!
Direct quote from Cheerwine.com: “Wanna know our secret formula? Being awesome.”
No way, I would be evil without my AM coffee. Plus I love the flavor – I guess I am now addicted to coffee. I sometimes have it in the afternoon too – 1/2 decaf.
Choe is so cute! Oh, the faces she makes!
Oh my gosh, everyone is going to love all the desserts you made!
Can you give us the amount of cream cheese and vanilla you are supposed to use? If not, no problem!
*Oops, I meant Chloe, not Choe!
The truffles…wow! I’d love the recipe too. I’m now having a chocolate attack! The pup is adorable.
Guilty pleasure: mexican take out on Thursday nights! I just finished Moe’s chicken nachos!!! AHHHHHH!
(Love your blog!)
Foodie and Meandmyshadow- No problem! It’s one package of oreos (crushed) combined with 8 oz of cream cheese… it’s easiest if you use a stand mixer. That amount makes about 30 truffles (or 24 HUGE ones)
Wow, congratulations Mom, Brian and Heather!! Everything in this post has made me drool!!
Chloe is just too cute. I love the fact that you have introduced me to pugs. I haven’t grown up around dogs since my dad is highly allergic, but I’m so glad I can see Chloe
I’m definitely addicted to Perez and TV!! Other than that, I love fitness magazines (I’m subscribed to at least 4 of them) and peanut butter.
Thanks Heather! You’re the best
Its getting chilly this time of the year, and its the perfect excuse to start firing up that oven and baking some bread. Here is an easy Cheddar Dill Scones Recipe you have to try that I discovered at http://www.foodista.com (there is also some easy recipes on this blog that you might like as well) Cheers!
