I Went to this Club Last Week, Called Chili's

I remember in college when Thursday nights meant great TV- all the roommates would watch Friends and Will & Grace before going out. And now once again Thursday is beginning to redeem itself. Kath & Kim cracks me up, LOVE The Office and 30 Rock. Hooray!

Today was my day off from work, but I still had to be at the store for a meeting from 6-8am. I’m running on about 5 hours of sleep right now :( After the meeting I put together a random breakfast quesadilla: egg whites and cheese on an Ezekiel tortilla, and a side of salsa.

Chloe reminded me today that she hasn’t made an appearance in a while. Here’s what I found when I got home from my meeting this morning:

You know those dogs that wake you up in the mornings and immediately want to play? No? Yeah, me neither.

The day was spent catching up on all the stuff I’ve been neglecting around the house. I did get a little shopping done with my mom and then grabbed a quick lunch at Tin Star. I had a grilled vegetable taco with pesto and picked at one with grilled chicken, black beans and sweet potato strips (too salty):

Tonight Joy came over for dinner. I made Giada’s Lemon Risotto recipe again… you guys need to try this one. It’s so easy to make (just a lot of stirring) but tastes amazing. The main dish was a roasted chicken based on Alice Water’s recipe in The Art of Simple Food. Very “Simple”- just rubbed some olive oil on the bird, seasoned with salt, pepper, and herbes de provence, stuck a lemon up its butt (I mean, “into the cavity”), and roasted at 400 for about an hour. You flip the chicken a few times during roasting to evenly distribute the juices and then let it rest for 15 minutes after removing from the oven. I also threw several cloves of unpeeled garlic into the roasting pan… not sure what to do with those, but roasted garlic is probably a good thing to have on hand, right?

Off to bed for some much needed sleep before my 8am class. Hrmph. Oh, Brian took a photo for the blog. He’s very excited about a Target purchase today:

Egg nog! With bourbon. That stuff grosses me out to no end, but he and Joy both had a glass after dinner. I’m all for holiday beverages- but I’ll stick with hot chocolate and gingerbread lattes. Nice, eggless options.

If you could go back in time and give yourself some advice, what would it be?

Me:

  • Think REALLY HARD before declaring a major- and possibly save yourself 2 semesters of Calc I (F and D, thankyouverymuch).
  • Stop being so self-conscious.
  • Reconsider those bangs.
  • Diet Coke = crack. Once you start, you’ll never stop… even 10 years later…
  • Blind dates aren’t always bad :)

    advice to myself:
    -don’t be so hard on yourself
    -live, live, live, and laugh
    -put your crap away after you take it out and finish with it

    First, I laughed so much when she said she was at the bar called Chilli’s! Like, I almost spit out my tea.

    Second, oh your dinner looks delicious and egg nog grosses me out, too!

    Third, nice letter. I definitely would have made myself give three reasons that do no involve Ally McBeal as to why I want to go to law school!

    Hmm… you got me thinking there. I’m not sure that I have an answer. I started to say never go out with a guy you meet at a bar, but no. I had one great experience and one horrible expereince. Let’s just say the police were involved with the unlucky one.

    Love the breakfast quesadilla! And as far as what I would tell my younger self:

    -It’s not a good idea to shave your eyebrows. The growing back process is painful.
    -You should listen to your mom the first time she tries to get you to play more golf.
    -Those girls are trouble (long story, haha). You should go introduce yourself to those other girls instead. They won’t make you feel bad about yourself.

    CLOOOOEEEEE! She is so CUTE! I love her. Also loving the Thursday night lineup, except for My Name Is Earl. I’m really over that show. And Eggnog is the bomb. I used to hate it but if you put enough rum or whiskey in, it’s pretty good. Oh, and nutmeg. I’m going to blog about what I would have told my younger self because it’s going to take some thought. Not that I have any regrets but surely the $25,000 in student loans could have been cut down some….

    While I have no regrets in life, I think I would tell my younger self the following:

    -The boyfriend who treated you terribly in high school will grow up to be the world’s biggest loser. You’ll get better looking and he’ll get ugly–go figure.
    -Never start smoking. It’ll take you ten years to quit. Take up another good for you habit instead.
    -NEVER let a friend bleach your dark brown hair white/blond. It will melt off and you will have to cut 10 inches off to make it look like actual hair again. Especially right before your senior pictures….sigh…

    Thanks so much for dinner last night! It was delicious–I’m already looking forward to the leftovers for lunch.
    Advice to myself:
    Never mix alcohol and dairy products (case in point: white russian incident). Obviously I broke this rule last night, but that’s cool–one dairy drink=wonderful, ten dairy drinks=disaster.

    I give no credance to your dislike for egg nog. You don’t like Cheerwine, so your credibility is shot.

    Things I would tell myself:

    1. You don’t have to know what you are going to do as a living at age 15. There are so many jobs you’ve never even heard of by that age.

    2. Play the field. You might meet the woman you are going to marry during your sophomore year in college and never have the chance again.

    3. Building good habits early, even though you might not need them at the time, pays off later when you will (i.e. – when school gets harder or your metabolism slows down).

    4. If you are going to go to law school, go to the cheapest top tier law school you can get in to and make sure you are in the top 10% of your class.

    5. Spend more time with your family. You might not always live so close to them.

    1. Don’t get married, just have kids. Oops, Maybe I meant don’t get married too young, there is always plenty of time to have kids.
    2. Enjoy your youth, it is fleeting.
    3. Don’t put off your dreams, because obstacles later in life may prevent you from achieving them.

    Kevin refuses to eat any combination of lemon and pasta. Even if it’s a complicated pasta dish with just 1/4 tsp lemon juice. For some reason this enrages me and encourages me to make lemon pasta just to spite him. Then I feel guity afterwards. So sadly I don’t think I should make risotto in a lemon cup, it might send him over the edge. Gourmet has a really good recipe for pumpkin risotto though… Try it!

    Haha- you guys are cracking me up… kind of interesting that multiple people mentioned hair and law school in regards to advice for the future. Both VERY important topics. It also sounds like several people have some interesting stories to tell (hmmm, Gammypie and Eatingbender??).

    Joy- Fancy Dress!! I remember the white russian incident. Now those just make me think of The Big Lebowski.

    Rhett- Is the eggnog a TN thing, or are you just trying to back Brian up here? Because nog is NASTY. Although I will agree with you on the bourbon.

    Brian- HA. I thought you got your field-playing out of the way freshman year- no?

    -no matter how difficult it may seem, most of it won’t matter a few years down the road
    -lay off that tequila, seriously.

    Don’t hate me but I never was a big fan of Friends, couldn’t really relate to any of the characters, in fact they all sorta annoyed me. Which reminds me actually, thanks for not revealing any Office spoilers this week! I’m just starting on Season 4, I’ll be caught up soon enough. :)

    Chloe is like my two. They jump up when the alarm goes off because they know they’ll get fed. Immediately after breakfast they go curl up back in bed with my husband while I get ready for work. Play in the morning? Out of the question.

    Skip more classes in college (and savor the college life) b/c when you start working in the real world, it is ALL day FIVE days a week!

    Gosh i miss the 15 hour a week class schedule and part time job life….life was so good….

    if i could tell my younger self something, it would be to be more outgoing! i was painfully shy until i got to college and missed out on a lot because of it. i’m making up for lost time though!
