I. Need. Coffee.

Sorry for the late post! Sadly, it sometimes takes me close to an hour to get a post up, and by the time we got home last night I just did not have it in me.

Every Tuesday and Friday I have class at 8, and every Tuesday and Friday I tell myself that I will prepare a healthy breakfast at home. Yet look what always happens.

Damn you, Green Spot and your delicious breakfast tacos! At least it was just egg and potato- and I got a sliced apple in there, too. I actually don’t feel that bad about the whole thing because I love this store and really want it to stay in business. A convenience store with healthy snacks is hard to come by. And their coffee is good, too…

In pastry class yesterday we made cherry strudel (from Monday’s blitz puff pastry), almond lace cookies, chantilly cream (fancy-talk for vanilla whipped cream) and sabayon sauce. We also played with yesterday’s red wine poached pears.

By the way, one of my group members, Megan, has the cutest baking blog: La Belle Patisserie. You can see more (much prettier) photos of the desserts we prepare in class, as well as other yummy desserts she’s created on her own.

I’ve been trying not to spend money on lunches, but yesterday I caved and stopped by Subway on the way home for a veggie delight salad. Why are the salads more expensive than the sandwiches? Iceberg lettuce is CHEAP, and it’s not like you get substantially more vegetables on the salad. Just wondering. Anyway, here’s the salad- topped with Annie’s Woodstock Dressing (which my mom is now hooked on, too):

Tonight I have my first book club meeting. We read Change of Heart by Jodi Picoult, which is not one I would normally read (just because the plot sounded so SAD) but was actually pretty good. See, that’s what book clubs are for, right? Getting you out of your comfort zone.

I’m bringing two desserts, both from Bakerella, and put together the first one last night: Red Velvet Sandwich Cookies. I’m going to call them whoopie pies, though. I love whoopie pies.

The recipe is easy, easy. The color of the dough was a little unnerving. It felt like I was making tomato paste cookies:

But they turned out great! The center is cream cheese frosting.

For dinner last night we met my parents, Jill, her boyfriend and her parents at Allgood Cafe for Two-fer-Tuesdays again. I had the Herb Roasted Chicken:

Not bad, but the pork chop was much better. Brian had the Chicken-Fried Steak and I stole a bite. That’s one of those dishes that I pretty much never order but would totally eat off of someone else’s plate. Also in that category: french fries, nachos, mashed potatoes, and basically anything deep-fried.

Alright, off to tackle all of the midterm to-do’s. But first…

I LOVED reading all of your comments about creativity yesterday. I especially loved Susan’s take:

Most of us never try because we are afraid of failure, some of us try and give up because we are bored/no patience/lack of drive/have no faith in ourselves. But those who are true to themselves and stay committed will find that creative part.

So true! I want to embroider that on a pillow or something. Any of you creative people know how to sew??

    Oh, thank you sooooo much Heather! I’m MAKING myself wait to tear into the cake balls …. Just because I know when I do, I’m probably going to eat the whole box in one sitting! LOL

    … And you probably don’t wanna know what I’m listening to right now! I’m old and don’t depend on my iPod that much. Since I work at home, I have the TV on most of the time …. Bad thing!

    I am totally out – I don’t own an I-Pod. I don’t even listen to music when I run or any form of exercise. I just enjoy the sounds of the great outdoors when I am lucky enough to be out there.When I am at the gym I try to zone out and watch the news on TV. In the CD player in my truck I am currently listening to the Raconteurs – I am a huge Jack White fan.

    I got the new U2 album yesterday so I have been listening to it. It is good so far, but I haven’t even made it half way through yet.

    Also, The Last Shadow Puppets with their songs “Standing Next to Me” and “My Mistakes Were Made for You” in particular, althoug their entire album is good (they only have one). They are a side project from the singer of the Arctic Monkeys, but they don’t sound anything alike. The Last Shadow Puppets kind of has a throwback sound, think strings and big arrangements; sort of James Bond-y I guess.

    I’ve been pumping myself up for the re-release of “Ten” by Pearl Jam which is going to be so awesome, so a lot of older Pearl Jam too, but they are always in constant rotation for me.

    Also, I have fallen back in love with “Untitled” from Interpol’s first CD, Turn on the Bright Lights, which is amazing start to finish, but that song has been getting a lot of plays lately.

    Those desserts look so fancy. I wish I could do things like that.

    You know what seems to never leave my playlist? The Cupid Shuffle. It’s a ridiculous song and about two years old, but I never get sick of it. Usually, at the end of my runs, I let it play two or three times. Ridiculous….

    Have you seen the cookbook called “Baked: New Frontiers in Baking?” It’s excellent. Also I recommend “The Art and Soul of Baking” (it was a Gourmet cookbook of the month) if only for the best homemade pizza dough in the world…
