So I’m a single gal tonight. Brian had some banquet to go to at SMU so I was on my own for dinner. Of course I miss him, but it is kind of fun to create my own little weird meal. After much deliberation, I ended up with….
Annie’s White Cheddar Shells (actually, Brian would have LOVED this- I saved him some):
And my all-time fave salad: arugula, shaved parmesan, olive oil, lemon juice, kosher salt & pepper. Simple but SO GOOD.
Lauren’s on spring break this week as well, so this afternoon my mom and I met her, Linda and Allison at a cool new (newish- they opened last July) restaurant in Oak Cliff, Bolsa. I love the concept; they have no freezer or fryer, meaning that everything is made fresh and the menu evolves based on what’s available.
We started out with fun drinks, because, as Lauren said, “It’s spring break!”

I ordered a turkey sandwich with horseradish pickles and white cheddar, and my mom ordered a grilled chicken sandwich with goat cheese. We swapped halves…
I think Gina won, but the horsey pickles were SO GOOD.
So you know how much I love new grocery stores, right? Well after lunch we headed to the grand opening of Newflower Market on Henderson:
I’d never been to a Newflower, but it’s very similar to Sprouts… which is like a cheaper, bare-bones Whole Foods. They had some GREAT deals. I got all of this for $40!
This afternoon I went on a short run (it was 80 degrees today- I was drenched) and then popped in the Jillian Shred DVD. It kicked my butt yet again. These push-ups better pay off.
The April issue of Everyday with Rachael Ray included a recipe for Peanut Butter-Banana Clouds which sounded kind of intriguing. The cookies are basically meringues with peanut butter folded in, so they come out of the oven light and airy but still chewy. Not crunchy like most meringue cookies.
And then you top them with banana frosting (mashed bananas, powdered sugar and butter- plus I added a little milk to thin it) and crushed peanuts:
These are SO GOOD. They remind me of that Peanut Butter Bar candy you used to get as a kid… the little white, crunchy rectangles filled with PB? The ones that stick to your teeth? I think most people hated those. Not me.
I’m off to watch Jon & Kate Plus 8 (a no-no when Brian’s home) along with my snack: Pyramid Apricot Ale and a couple Peanut Butter Clouds.
