Hope everyone had a great weekend! We had a very relaxing (LAZY) couple of days. I was actually pretty productive on Friday: cleaned the house, got a couple loads of laundry done, dropped some clothes off at Goodwill, and-most importantly- found these cute sandals at Target. Once Brian got home from work, we threw stinky Chloe in the tub for a quick bath and then headed off to the lake. I was seriously craving some Mexican food, so my parents graciously obliged by taking us to Jalapeno Tree in fabulous Gun Barrel City (I can’t make this stuff up, folks).
*Note: I freaked out on the way to the lake upon realizing that I’d left my camera at home. So all of the photos from this weekend are either from Brian’s phone or my mom’s camera. Then I got home today and reached into my purse- which was on me all weekend- and see my camera hanging out at the bottom. Damn.*
I had a chicken taco and sour cream chicken enchilada. My dad ended up taking care of the cheese enchilada. Thanks, dad.
On Saturday we ran a few errands with my parents, including a trip to this really charming Pennsylvania Dutch food store near the lakehouse. They make all kinds of pies, breads, kolaches and sandwiches. My parents picked up a few things for Easter lunch, and we also grabbed sandwiches for lunch. Turkey on a homemade whole wheat bun:
Brian laughs because whenever we go to the lake, everyone wants him to be their playmate. I’m whining about going for a walk, my dad wants him to go hit golf balls, my mom is trying to get him to fix her iTunes account. He’s like the sweet-natured child they never had. So the rest Brian’s day was spent going for a long walk (with me), visiting the driving range (with dad), and a golf cart ride (me again). He did get some alone time to fish that evening, though. My brother showed up Saturday night and we watched a couple episodes of The Real Housewives of NYC. I’ve never really watched that show. It’s amusing, but I have a feeling it’s not going to hold a candle to the Real Housewives of New Jersey. Can’t hardly wait for that one.
My mom bought a package of homemade garlic-dill pasta at the Pennsylvania Dutch store, so she made us a really yummy chicken stroganoff for dinner… along with “pickled shrimp” (shrimp, capers, lemon juice, celery seeds) and guacamole. Such an eclectic plate.
The big highlight of the weekend was the fox family that’s living in a culvert next to the lakehouse. There’s a big mama fox and 6 super cute little kits. They were rolling around and playing like puppies. My dad got a few good shots of them (sorry, kind of blurry):
And finally… Easter lunch! My mom went all out:
- Deviled Eggs
- Caprese Salad
- Roasted Asparagus
- Rosemary Potatoes
- Ambrosia (my fave)
- Wheat Rolls
And for dessert, both strawberry and cherry pie.
We were miserable afterwards. The dogs got a few bites of turkey, and even they were pretty much comatose after lunch. Luckily we got home early enough for me to take a nice run around the neighborhood. Sometimes it feels good to just get out there and sweat, you know?
So hope everyone else had a fun, relaxing weekend as well. I’m off to convert recipes and fold laundry… night!
What are you planning on doing with your tax return (if you’re getting one)?
Sorry, taxes on the brain… Brian just finished ours tonight. The plan is to put it into savings, but I’m hoping to use a little to put in a flowerbed out front and maybe some flagstone in the side yard. We’ll see…
