Don't You Judge Me

Today just seemed really busy. I got up at 6 to babysit and the whole day up until now was jam-packed. Started out the morning with a Green Monster:

I’m out of Almond Breeze and I need to get more ASAP. It gives the smoothie a little sweetness and makes it creamier than plain skim milk. The rest of the drink was per usual: spinach, mixed berries, protein powder, milk and ice. Oh, and I added a little honey at the end to make it sweeter.

Got hungry around 10 while the kids were at the dentist and had a Chocolate Brownie Z-Bar. Yum.

Lunch was bordering on questionable in terms of leftovers. I made pasta with turkey meat sauce on Wednesday night and we had a TON left. I put it in the fridge immediately but didn’t have a chance to eat it until today. Eh, as long as it’s properly stored, pretty much anything cooked that’s under a week old is fair game in my book.

The rest of the day was spent running to Northpark (to Build-A-Bear… whoever came up with this concept is a genius. It’s like crack for kids- all the little outfits and accessories), visiting Chloe, tae kwon do lessons, swimming.

Finished babysitting around 5:30 and made my daily Target run- more vitamins and dinner stuff- then headed home. I’m going to let you guys in on a little secret: deep down I’m actually very white trash. Take tonight’s dinner for instance: Diet Coke Chicken.

This is actually a Weight Watchers recipe that I ran across years ago, and admittedly it sounds really, really gross. But trust me- it’s good. You basically throw some chicken breasts in a saute pan and dump the following on top: a can of Diet Coke, 1 cup of ketchup and a packet of french onion soup mix. Simmer for about 45 minutes (basting occasionally) until chicken is cooked through and sauce is thickened. What you end up with is a a really tender BBQ’d chicken breast… and the house smells amazing, too:

For you artificial sweetener haters, I’m sure regular Coke would work just as well. I had mine (half a chicken breast) with a side of carrots and hummus, and we split a small spaghetti squash (with salt, pepper and parmesan).

Ugh, just finished the Jon and Kate Plus 8 episode. What a bummer… not that it was a surprise. But still.

‘Night kids! Gotta be up early tomorrow- 5am, yikes.

    Hahahaha white trash! I freakin’ love it!
    To be honest, I really can’t think of any trashy foods BUT that doesn’t mean I don’t have a trashy side.
    I agree on the leftover expiration rule. I know someone who marks their food and throws it out after three days. Uhh…

    I love whipped cream out of the can. Oh boy! A can of that stuff does not last long in our household.

    My fave questionable food is Velveeta. I absolutely adore it even though I couldn’t really argue when one of my friends said that she wasn’t sure it actually qualified as cheese. It just melts soooo well. And I really, really love Velveeta queso dip. mmmmmmm

    I’m with Marie, mmm velveeta. And Campbell’s cream of fill in the blank soup, I’m sure there are more, it’s just the plaque in my brain is preventing me from remembering them right now.

    Fried pickles and chicken fried steak for me. And my husband loves chicken gizzards…which I am very ashamed of. I think that deems us WT worthy…haha!

    My mom makes grilled steak tips with coke, so i don’t think it’s that odd.
