I’m in a good mood right now for several reasons:
1. My awesome Snoogle pillow came in today and I’m using it right this very moment. My back says thank you.
2. Sonogram tomorrow!!! Those are always fun.
3. Dinner was delicious.
4. Holiday weekend! And it’s a FOOD holiday- the best kind.
What can I tell you? It doesn’t take much, folks. Food and pillows.
Woke up kind of late this morning- like late enough that I didn’t really want a full breakfast. So instead I ate two of these On the Glo cookies instead:

True story: As a kid I pretty much refused to eat breakfast. I hated cereal, eggs, pancakes, oatmeal (gasp)… all of the normal breakfast foods. So for two years straight I ate a bag of Brownie Bites every morning before school. Nice, right? My poor mom.
We were running seriously low on groceries today so I had to dig around for lunch supplies. Luckily we had a box of Morningstar Farms Chik’n Patties and one last Ezekiel english muffin. So a “chicken” sandwich it was, with mayo, dijon mustard, spinach and spicy pickles- along with baby carrots and an apple:

The other night we were watching Good Eats and Alton made a Molasses Coffee Marinated Pork Chop. Sounds weird, right? Well, the recipe received decent reviews on Foodnetwork.com so I decided to give it a shot. Newflower had boneless pork cutlets so I used those instead of the bone-in chops. Marinated the pork for an hour and then Brian threw them on the grill while I boiled and reduced the marinade.
On it’s own the sauce was pretty bitter, but we both loved it on the pork.

The best part of dinner was also the easiest: Tomato Couscous with Capers from Veganomicon. You cook the couscous in juice drained from a can of diced tomatoes, which then get added to the couscous at the end along with capers. This was SO GOOD. I kept going back for seconds… and thirds. And the recipe makes a ton so I’ll have plenty leftover for lunch tomorrow.

And finally- swiss chard sauteed in butter and olive oil with garlic.

I can’t remember the last time I made a full meal like this. Hopefully I can keep the momentum going because this was way healthier than last night’s dinner.
I’m off to read magazines- new Bon Appetit today!- and hide from Chloe, who for some reason will not stop licking my shins. Annoying. And creepy.

I’m already looking forward to being home tonight. Is that sad? It’s only 10 a.m.
I am looking forward to having Friday off, a pedicure tonight with sister in-law, fireworks and seeing friends.

I had a snoogle just like that when I was pregnant. I loved it, although the rest of the family (Mike, the dogs and the kitties) all hated it because between me and Mike and the pillow, there was no room for anyone else in the bed but us.
Our kitties apparently did not appreciate this, because one of them peed on it one day while we were both at work, thus ruining it. That was the end of my snoogle bliss.
I am looking forward to spending the weekend at the lake. Yay fireworks and grilled foods!
