Kashi Mayan Harvest Bake

I got really excited when I saw this meal in the frozen foods section of Whole Foods. First of all, the Kashi meals are generally less expensive than most of WF’s frozen offerings. I also LOVE plantains, so as soon as I read the box I was hooked:
“Plantains, Black Beans, Sweet Potatoes & Kale
Kashi 7 Whole Grain Pilaf, Amaranth & Polenta
Spicy Ancho Sauce”
Prep: Kind of long. Microwave 5 minutes on half-power, 3 minutes on full and then let sit 3 minutes in microwave. Fine for at home… but a little long to hijack the microwave at lunchtime if you’re in an office.
Appearance:

Not exactly as it appears on the box. I see plantains, sweet potatoes and pumpkin seeds (?). Everything else just kind of melds into a brown mess.
Taste: Hmm. Is it possible for a dish to be both spicy and bland? This definitely has a little heat (from the ancho, I assume) and smells delicious, but the taste is desperately lacking in seasoning. I was initially impressed by the relatively low sodium count- but that loses its luster when you have to go to town with the salt shaker. I also added a few sprinkles of Chipotle Tabasco and a dollop of sour cream. See?

The Kashi grains are nice; they give the dish a nutty flavor and some chew. The big chunks of sweet potatoes were good, but the kale was basically non-existent. I dug around and saw a few tiny pieces of green. The plantains were just kind of mushy and tasteless.
Verdict: I don’t see myself buying this again. Despite the 8g of fiber, it wasn’t terribly filling- especially given the calorie/fat count. I’ve had Kashi meals in the past and really enjoyed them, so this was a big disappointment.

Bummer. I was hoping you’d love it! I actually feel that way about most of Kashi’s meals. They are just blah sadly.
yeah, i had high hopes for this one too, and it was ok. definitely not a full meal. and no kale in mine, either
So sad. I really liked this one. I guess I have low frozen meal standards.
I loved it! I’d agree it didn’t look anything like the picture and also that the kale was lost, but the flavor of the one I had was wonderful. In fact, I ended up at this site looking for a recipe.
