Holy Cow

WOW!!!!! 140 comments! I’m glad to see that I’m not the only one who loves Puffins, and Larabars, and almond butter. You guys are the best. Breakfast this morning was the long-lost Green Monster (in a Blender Bottle!):

  • 1/2 C Vanilla Almond Breeze
  • 2 Scoop 365 Brand Vanilla Protein Powder
  • 2 Giant Handfuls of Baby Spinach
  • 1 Handful of Frozen Berries
  • 5 Ice Cubes

Don’t you love my precise measurements? “Handful o’ spinach.” Yum Yum.

I think I mentioned that I’m nannying full time this week and half days next week. It’s stressed me out a little, only because I’m there all day and then for some reason my nights have been REALLY full this week. We have Restaurant Week reservations at Craft tomorrow night (yea!!!), Thursday night I have a friend’s baby shower to attend, and then I promised my Grandmother that I would have a cake ready for her by Friday. It’s weird because we’ll go weeks and weeks with NOTHING on the calendar, then it all hits at once. Oy.

Packed a little lunch to take to the nanny job today: curried sweet potato and cauliflower soup leftover from Sunday night, a whole wheat Alexia roll, and a little buttah. I’m not even going to try and convince you that this looked good (the soup thickened into the consistency of baby food), but it tasted great.

Okay- I have a new addiction, thanks to the latest issue of Real Simple:

Three Sisters Marshmallow Oaties. They’re the “healthy” version of Lucky Charms, and a giant bag is only $3.50 at Whole Foods. By healthy, I just mean that they’re not artificially sweetened or colored… so if you like those little marshmallow rainbows (and they are kind of fabulous), you’ll be S.O.L. Anyway, these taste great and I’ve had a bowl for my afternoon snack for the past couple of days.

For dinner we tried to visit a new restaurant that Margie has raved about, El Piquin. How can you beat 20 tacos for $10? And free soup? And free beer?? Sadly, despite the “Open 7 Days” sign, they were closed. Brian was in a rush so we ended up at our normal burger joint, Fat Daddy’s… with my usual turkey burger.

I remember how hard it was to come up with good ideas for lunches to take to work every day (other than yet another Lean Cuisine). And this just might be the topic for article #2.

    In my book, nothing beats a peanut butter and jelly sandwich. When I want to trick it up I go for a PB and banana or PB and honey. The best part about the PB sammy is that I can eat it on the go.

    I’d take leftovers more often, but the microwaves at our facility are located on the first floor and there is always a line(something about pacemakers). Not to mention, there are only a few fully functional machines.

    My favorite packed lunch is either the kashi mayan harvest bake frozen meal (yeah I know) or a tuna sammie on an arnold’s sandwich thin!

    I still love peanut butter and jelly sandwiches — it never gets old.

    Leftovers are also great for lunch. I like taking a veggie burger that I made the night before and crumbling it over salad. Yum!

    Loved the article. Great job. I need to come live with you a week and you teach me ( i’ll clean the house for the training).

    My favorite packed lunch is whatever I can pull together, a little of this and a little of that. There is no rhyme or reason.

    I like taking a ginormous salad for lunch. I get my veggies, and I don’t need to worry about standing in the microwave line.

    Great article!

    Whenever I have a free Sunday, I’ll make a freezable meal (chicken enchilada casserole, a baked pasta, pretty much anything that reheats well) and freeze them in individual portions so we can pull them out and heat them up for lunches. That’s been rare lately, so huge ‘clean up the fridge and cabinet’ salads are pretty standard work lunches for me…but I’m a sucker for a turkey or chicken salad sandwich when I have the time…mmm.

    I am boring and uncreative so I bring a PBJ (Peter Pan creamy PB w/ Welch’s Grape Jelly) to work everyday. I love PBJ’s though and look forward to eating it everyday. I go through withdrawals if I don’t get my daily fix.

    I am just bummed that Peter Pan Whipped is nowhere to be found these days. I had a stockpile that I had to completely get rid of when ConAgra had their salmonella scare/recall a few years ago. Now, no grocery stores in the area stocks it. Bummer.

    we’re going to abacus tomorrow night! Can’t wait to hear about craft. We’re doing Blue Plate on Friday and then I have TWO cakes to prepare by Saturday at 2 p.m. Yikes!
    Do you have a good, stiff recipe for cream cheese buttercream?
