Who Hid the Eggplant?

Today was a to-do list day. Luckily I got MOST of the stuff crossed off… most, but not all. Luckily I don’t have to be at work until noon tomorrow, so hopefully I can cross off a few more.

Is anyone else finding some crazy deals right now? Last night Target had my favorite Quaker Cinnamon Oatmeal Squares on sale for $2.75, so that was breakfast- along with half a sliced banana:

Then I hit up Central Market today and scored a free box of PB Puffins just by purchasing a half-gallon of milk. And if that wasn’t enough, they were running another sale where if you bought a pound of their house brand roasted turkey lunch meat (which is really, really good, by the way), then you got a free loaf of bread and half pound of cheddar. Lunch for a week! It’s like Christmas.
Lunch today was disappointing. The latest issue of Everyday with Rachael Ray suggested making tuna salad with mashed avocado instead of mayo. Sounded good, except that I accidentally bought oil-packed tuna. Yuck. The whole tuna-avocado thing was just boring. I tried to spice it up with a little mayo and dijon mustard but it was still kind blah. I had it on an Ezekiel tortilla with baby spinach and pickled asparagus (weird, I know) and a sliced plum:

I could have sworn that we had an eggplant in the fridge, but it somehow disappeared. I blame Chloe. Anyway, eggplant parm was out so I had to improvise for dinner. We did have spinach, chickpeas, marinated tomatoes and pasta. I ended up sauteeing the spinach in olive oil, adding garlic and cooking for a few more minutes, then tossing in a can of (drained, rinsed) chickpeas, a few marinated tomatoes, red pepper flakes and a lemon’s worth of juice and heating through. I tossed this all with cooked rotini and topped with lemon zest and lots of fresh parmesan.

On the side was Alexia garlic bread.

I spied some frozen cherries on Care to Eat this morning and had been thinking about them all day. Is that sad? Anyway, I found a couple frozen bananas in the freezer- so you know what that means!!

Soft serve! I’ve made this before with bananas only but it was SO much better with the cherries. Just tossed them all in the food processor and ran for 5 minutes, scraping the sides a couple of times. And yeah, that might be a brownie hiding under there.

Apparently Jack like it too because he’s going crazy right now. My stomach looks like something out of Alien.

    I think the best deal to me right now is a gallon of milk from Kroger for $1.99. I love me some milk!

    Winn-Dixie had a great deal on cereal, milk, & eggs. If you bought 4 boxes of mini-wheats for $10 (good price!), then you got a free gallon of milk and a free carton of 1 dozen eggs.

    Best deal by far was last Tuesday at the Gap – buy one get one FREE on all sweaters, shirts and t-shirts (full price too). Plus it was 10% Tuesday for Gap card members, and I had a $10 off coupon.

    Price chopper has 4 kashi products for 8 dollars this week, including all their snack bars and cereals. I would load up on cereal boxes but I already have so much cereal.

    Bell peppers at Market Street were $1 each. Fifty cents off. I love deals like that!
