Whew, we’ve been having some crazy weather here tonight. I’ve never seen so much lightning! Chloe and I went over to my parents’ house a couple of hours ago to bring in their mail and feed the cats, and just as I got there the power went out. Luckily our electricity has hung on… so far…
I almost made pumpkin oats for breakfast this morning, but then decided that a smoothie sounded better. I had another flavor of Amazing Meal to try out: Pomegranate Mango Infusion.
Along with a pumpkin chocolate chip muffin:

- 1 C Skim Milk
- 1 Packet Amazing Meal Pomegranate Mango Infusion
- 1 Frozen Banana
- 1/2 C Frozen Mixed Berries
- 2 Big Handfuls Baby Spinach
- Ice
The smoothie was okay but not my favorite. It wasn’t very sweet, which is probably because I used skim milk instead of Vanilla Almond Breeze. The pomegranate-mango gave it a tropical flavor. My favorite Amazing Grass so far has definitely been the chocolate. I’m seriously considering investing in a tub. And I still have yet to try any of the energy bars… though I hear that they’re delicious!
Spent the afternoon working on a little project for Jack’s room. For lunch I dug into Saturday night’s leftovers- vegetable lasagna:

And then an apple with almond butter:

The news had been buzzing about the impending storms all day (slow news day?), so what makes a better rainy night meal than chili and cornbread? I used my standby veggie chili recipe- the one I’ve been making since college. It’s fast, healthy, tastes amazing and makes a giant batch. The cornbread was just the $0.44 box of Jiffy.

Tonight we watched The Business of Being Born, a documentary about, well, birth. It was interesting, though definitely a bit biased (anti-hospital, pro-midwife/home birth). Oddly enough, the film really just reaffirmed my confidence in my OB and hospital. At the very end, this one mom goes into labor 5 weeks early, tries to deliver at home, and then ends up rushing to the hospital for a c-section because the baby was breech. Scary stuff. I thought she was going to have the kid in the taxi. I’m sure that was an exception to the rule and that most home births are great- but just not for me. OH, and the movie was produced by Ricki Lake… who you see completely naked and giving birth in a tub. Just FYI.

My fav smoothie combo is really anything with banana’s they add so much flavor! i love chocolate, PB and banana, i mean who doesnt??
1/2 banana
1 scoop chocolate Protein powder
1 tbsp PB2 or all natural PB
1 cup unsweetened almond breeze
water/ice
SOO GOOD!
Your chili sounds great. My favorite smoothies are the standby banana/strawberry/pineapple. Nothing very creative.

I never make smoothies but I got a recipe for one with blueberries and peanut flour that sounds interesting
