Soup x 2

It really felt like fall here today… cold and drizzly all day long. I have to admit, though- I kind of like it.

Breakfast was two bowls of THIS.

My favorite faux Lucky Charms! Whole Foods finally got more in stock!!! I’ve been in the store almost weekly and they’ve been out (at least when I’m there) for months. The cashier was apparently a big fan, too. She was gushing over the cereal as she rung me up. They’re addictive.

Y’all are going to laugh at me. I committed one of the food blogger mortal sins: same meal for lunch and dinner. Tortilla soup. At lunch I heated up last night’s leftover soup, along with a ham sandwich on whole wheat. I don’t even like ham, but a sandwich seemed like a good idea and Brian had picked up the deli meat at Target last night.

And for dessert- a hugeass Honeycrisp apple.

I’ve never not been able to finish an apple, but this one came close. It was almost the size of a softball.

After lunch I made a trip to the maternity store (gag- I’m ready for real clothes again) then to Wal-Mart. That place can be a pain in the butt to deal with, but you really can’t beat the grocery prices. The goal was to stock up on a bunch of ingredients in order to make a few freezer meals to have on hand once Jack gets here. I looked through some old recipes and came up with three good options: turkey-spinach lasagna, vegetarian chili, and chicken-green chile casserole.

This afternoon I knocked out two of the three- the casserole:

So is it bad that I spent all afternoon cooking and we ended up going out for dinner? We made a quick trip to Northpark and then I decided that soup sounded good. I mean really- when does soup NOT sound good? Brian was a good sport and took me to Mariano’s:

Yum. And a big squeeze of lime made it 1000x better.

So I’m a big idiot who can’t read a calendar. My doctor’s appointment is actually TOMORROW, not today. Luckily the office calls with appointment confirmations and I got their message before leaving the house today. After this appointment, I have to go back weekly until Jack gets here. It’s getting close… yikes.

    We almost went to Mariano’s last night, but my husband convinced me that a Little Caesar’s Hot n’ Ready was a better fit for this rainy weather. No worries. We have plans to go another night this week. Mariano’s is on our weekly rotation.

    I’m probably the only one out there who loves it when it gets dark earlier. I find it so cozy and soothing. I think I’ll use my extra hour to sleep.

    Nowadays it doesn’t even feel like an extra hour; it feels like an hour we all deserve! haha
    Soup is always so nice and comforting.

    All this talk of soup is making me want to cook some tortilla soup. It really has been that kind of weather.

    So smart about freezing the food… but know that you are also going to be stocked with food from your lovely friends…ahem.

    I am going to use my extra hour to convince my kids that they need to take it too. think it will work? Sorry we missed dinner tonight…Tony’s sounded really good too….

    Well, I made the roasted brussell sprouts tonight. Bradley ate 4 halves, Gil ate 5 halves, Aaron ate 1 halve and I ate too many to count. They were really great. We don’t eat brussell sprouts usually. We used to never eat cauliflower either until I got a recipe for roasted cauliflower and everyone eats it now. It’s similar to your brussell sprouts but most of my crew couldn’t get past the after taste. I will be making them for myself again though. Thanks HeatherBies!!!
