Let It Snow

So apparently Dallas is going to get more snow tonight??? What is going on here? I’d like to point out that in Jack’s young 12-week life, he has already seen snow SIX TIMES. Do you know how old I was before I’d seen snow that many times? I think junior high. And that’s only because we’d go skiing for spring break.

Jack had his first Sam’s Club outing today. Exciting, I know. I’m telling you this because I scored a HUGE tub of Sabra (the best hummus ever) for $1.81. They also had big jars of bruschetta topping for the same price. Crazy, right? We don’t hit up Sam’s Club all that often- but I do love their produce. And the giant logs of goat cheese.

Lunch today was last night’s leftovers. Roasted Cauliflower Curry with Toasted Almond Basmati Rice:

Along with a couple pieces of flatbread topped with Sabra, of course.

For dessert:

My mom gave me this Food Network cookbook a while back, and I have to confess that it’s been sitting in my garage for months.

For some reason I decided to flip through it yesterday and came across several recipes to try. The first (and weirdest) was an Alton Brown recipe for Eggplant “Pasta.” I put it in quotes because the eggplant IS the pasta. You peel and slice it, salt it, then cut it into strips.

Then you just saute the “noodles” in some olive oil, garlic and crushed red pepper. Alton says to add seeded, diced tomatoes, but I just dumped in some Barilla marinara. Then you add heavy cream (I used half and half) and simmer to thicken.

Verdict? I loved it, but then again I love everything eggplant. I also ended up sauteing the noodles for longer than the recipe indicated- even covering the saute pan for a while to let them cook down. Otherwise it seemed like the eggplant strips would be too raw.

On the side we had spinach-asiago chicken sausage and my new favorite- roasted broccoli with lime zest and parmesan.

Good stuff. And lots of eggplant left over for lunch tomorrow.

Now that Jack’s down for the night, I’m going to have a glass of wine and a marshmallow egg for dessert. Keeping it classy.

So I guess I’m on day 6 of the 30 Day Shred. Last week I did it M-Th, Fri off, Sat, took Sunday off to run, then did it again today. So that’s six. I know Jillian probably intends for it to be 30 days IN A ROW, but I think a day off is probably a good thing. Anyway, it’s still kicking my butt- though it’s not really showing up on the scale yet. I’m trying to be patient. Maybe I’ll see more results after I move up a level? Yeah, I’m still on level 1. Weak sauce.
