Can I start off by saying how glad I am that tomorrow’s Friday? Yeah, real glad. I’m tired.
Breakfast- Oroweat Multigrain English Muffin topped with crunchy pb and blueberry preserves, along with fresh blackberries:
I’m thinking that my next cookbook project might be The Martha Stewart Cookbook: The Original Classics. I flipped through it last weekend and found a TON of recipes to try. Granted, most of them are more time consuming than I’m used to… but not all. For example, the Creamy Tomato Soup- which I whipped up a batch of yesterday.
Super easy. You just saute onions and garlic in olive oil, add some crushed tomatoes and spices, simmer for a while, then add half and half.
It reminds me of Corner Bakery’s tomato-basil soup. Very tomato-y and not overly rich. I had that for lunch today- along with an Ezekiel english muffin spread with goat cheese and balsamic vinegar, topped with a couple of piquillo peppers.
Ahhh- awesome, easy lunch.
Jack was super sweet this morning, but for some reason from his afternoon nap on he was FURIOUS. I don’t know what the deal was. It’s really frustrating because no one can get him calmed down, therefore no breaks for mommy. My mom came over this afternoon and watched him while I took a shower. Unfortunately the monitor is right next to the bathroom so I could hear him hollering the entire time. And then tonight I had a much-needed girls night out (very exciting), so I pumped him a bottle so that Brian could feed him before bed. Then on the way home from dinner I called to check in and could hear Jack screaming in the background… apparently he’s now refusing to take a bottle. This is new. So I feel like bad mommy because he’s hungry and I’m out with friends.
Ugh. Sorry for the vent. He’s now fed and asleep… and I need a cupcake.
Despite the Jack meltdown, tonight was fun. Jack and Brian hung out with the rest of the May family while Julie and I met Lauren, Allison and Camille for dinner at Monica’s Aca Y Alla. I didn’t realize that on Thursday nights their drinks are only $3.50 and several of their tex-mex meals are less than $5. Not too shabby.
I had chicken enchiladas with tomatillo sauce:
Okay the kitchen looks like a war zone with baby bottles everywhere, so I’m off to clean that up and then maybe catch up on book club reading. Night.
