We’re having quite the rainy night here- not that I’m complaining. Maybe it’ll cool things down a little??
I’m in another yogurt rut. At least the fruit is getting switched around.
Plain yogurt, chopped peach, blueberries, walnuts, chia seeds and honey. Oh, and coffee made with my new Pumpkin Pie syrup!!! Though I need a pump for it… this morning I added too much and my drink was a little (LOT) on the sweet side.
Jack has his 9 month checkup on Friday, so since we’re missing our traditional Friday lunch with Brian, we decided to meet up today instead. Speaking of ruts, I think this is the 3rd time we’ve eaten at Lucky’s in the past month.
I had the chicken with mushrooms & swiss with broccoli and mashed yams.
Per usual, Jack ate all but 2 bites or so of my yams. He gets his appetite from his mama
So the list of cool finds goes on… look what we picked up at Newflower this weekend:
Peanut Butter Chocolate Chip Larabar!!!! It tasted like a no-bake cookie (which I LOVE). My only complaints were the small size and the calorie count. It was 230 calories and 12g of fat- so in terms of calories, you’re basically eating a candy bar. On the plus side, the only ingredients are dates, peanuts, chocolate chips and salt. So I guess it’s a healthy-ish candy bar??
I also bought the Chocolate Chip Cookie Dough flavor, so I’ll let you know how that one pans out.
For dinner I marinated a steak (London broil) in a Stubb’s steak marinade for an hour, then seared it in a cast iron skillet for about 5 minutes per side and finished it off under the broiler.
Can I just say that I suck at cooking steaks??? This was way too tough. We need a new grill so that I can transfer the steak-cooking duties back to Brian.
While the steak rested, I added some sliced mushrooms and garlic to the skillet and sauteed for a few minutes- then deglazed the pan with some leftover red wine. Those simmered for a few minutes (reduced to about half), then I added a tablespoon of butter to thicken it up a bit.
Also on the side- roasted broccoli topped with lime juice and grated parmesan.
Am I the only one that feels like this week is draggggging? I need the 3-day weekend. NEED it, I tell you.

Hey Heather, Okay – I saw this on the food network one time and it completely changed my feelings about (and success with) cooking steak. It was some Alton Brown show and he says to only buy rib eyes or something cut from around the same area. You start by putting the racks in your oven as low as they both will go. Put a piece of foil made into a little sheet like thing on the lowest one (big enough to catch what ever drips off your steak.) Turn on the broiler and when it gets hot, put the steaks right on the other rack over the foil. Time it 5mins on one side, turn it over, 5 mins on the other side. Then, you take them out and get your grill pan (or grill, I guess) really hot and then just sear the steaks on each side. I use a grill pan on top of the stove and we like our steaks medium rare, so I only let them sear long enough to get the grill marks- which is probably less than a minute but, my grill pan is smoking hot before I put them on. Anyway, they come out perfect everytime. I’m not sure why and I’m sure Alton taught us the science behind it on the show, something about breaking down connective tissue or something. Anyway, just thougtht I’d share that. Jack is precious!! I love his pictures and he has the most beautiful smille!! and he is so smart!! I know your mom and dad are enjoying every second! Take care and come see us in Hughes Springs sometime, Love, Pam
Thanks, Pam!! I’ll definitely try this method next time… and Brian can scrub the oven rack afterward
heather i love love love the blog!
jack is soooo adorable!
i was just reading about the london broil and usually i never comment on anything but i feel your pain about cooking steak! but my dad would always do “8 and 10″ let me explain…lol
turn on your grill, get it nice and hot, throw the steak on (i usually put the lid down) set that timer!
leave on 8 mins, flip and then the other side for 10!!!
98% of the time it comes out perfect for me–and i SUCK at grilling steak!
i hope this will work for ya!!
I really do like larabars. But at the same time, they’re super tiny and expensive for my tastes…
Haven’t had all their new ones yet, though!
Yay for the rain, hope it cools down for you! I’ve never cooked steak because I’m afraid it would be a disaster, but I love to eat the fat, only the fat:)
I agree! Steak is hard! That’s why I order it when we go out.
