Hey guys- I’m not feeling great and really just want to get to bed right now. But first I have something VERY exciting to show you:
We have a walker!!!! It’s been a long time coming. For months he’s been walking only while holding our hands, or maybe 2 steps between the couch and the coffee table. At Little Gym on Friday, he pretty much ran halfway across the mat, and then last night at my brother’s birthday party (that’s where the video was shot), he just took OFF. I think the cheering squad helped. Most of his buddies have been walking since right around a year old, but Jack has always been less interested in gross motor. He’s more of a verbal guy… but I’m so excited that he’ll be able to run around with his friends now!
We spent the weekend doing all kinds of projects, mainly outside. Planted impatiens, azaleas, elephant ears and monkey grass. Brian assembled Jack’s slide for the backyard. We even bought new house numbers. FOUR Home Depot trips this week… that is so unlike me. Now let’s cross our fingers that we don’t kill everything. That’s how we roll.
Last week I made Pioneer Woman’s Spicy Dr. Pepper Shredded Pork in the slow cooker. The recipe calls for braising the meat for hours in the oven, but we’re never home for that long of a stretch. It’s just easier to brown the pork in a skillet and then throw it in the slow cooker (high for 4 hours or low for 8). I used a smaller pork shoulder than what was called for in the recipe and only added 3 whole chipotles in adobo. Good thing, too- it was still pretty spicy! Like definitely too much spice for Jack.
Served over warm corn tortillas with Mexican blend cheese and lime wedges.
YUM. This was our dinner on Friday night, but we had leftovers for lunch today and they were even better than the first go round.
Alright off to meal plan then bed. Oh, guess what? I actually got up and ran at 6:15 Friday morning!! It was perfect- I was able to shower and even drink a cup of coffee before Jack woke up. Bliss.
