Holy moly, it seems ridiculous to blog about food right now with what’s going on in the news. It’s really hard to focus (and thanks, Facebook, for once again keeping me abreast of world affairs).
Ridiculous or not, here goes…
Brian’s mom, Kathy, flew in from SC on Thursday to spend the weekend with us. Friday we took Jack to Little Gym then spent the rest of the day hanging out and catching up on royal wedding highlights while Jack napped. Once Brian got home we headed to Mattito’s for dinner.
Saturday we were up bright and early for the Run for the Highlands 5K. I was all, “Oh, 3 miles! That’s nothing!”
But then I realized that I’m insanely out of shape and that the entire course was uphill. In the snow. Okay, no snow but the hill part was true.
I ended up finishing in 26:30, which is a split time of about 8:55/mile. Not stellar but I did place 4th in my age bracket. And I looked smokin’ hot afterward, too.
Loving that glowing red face. Jack’s like, “GET OFF ME, MOM. You’re disgusting.”
The post-race party was fun, too. Chick Fil A, petting zoo, Krispy Kreme, bounce house. I thought Jack’s head was going to explode from all the excitement.
Saturday night we had dinner at home. I always try out new recipes, love the dish and then immediately forget about it. Luckily I remembered the stuffed peppers with tomato basil cream sauce that we had a while back and decided to give it another shot.
Made with ground turkey and served over mashed potatoes:
The sauce is the clincher here. I had to restrain myself from eating it straight out of the saucepan.
This morning Brian’s dad came into town and we met him for brunch at Crossroads Cafe. I’ve tried a LOT of dishes here and this has been my favorite by far:
Breakfast skillet: Egg whites with bacon, cheese and salsa verde. I’m super picky about flour tortillas, and the ones served on the side tasted homemade. OH- and as if that wasn’t enough, you get pancakes, too.
