In keeping with the THANK SWEET BABY JESUS, FALL IS HERE theme of the week, Jack and I headed to the Arboretum again today. We met up with 2 of his ladyfriends, Ella & Zoe. Jack ran and ran and ran his little heart out (and inevitably fell and busted his forehead… sigh) for two glorious hours. It’s so nice having “play outside” as an option again. Then he came home and slept from 1:45-5!!! I kept checking on him but he was just snoring away.
Another sign of fall? Pumpkin Spice Latte!!! They’re back! I even got a sample at Target. Or that’s a Grande and I have REALLY HUGE HANDS.
For dinner tonight I made my standby Veggie Chili. I came up with this recipe back in college and have probably made it 50 times since. Today I switched it up a little by cooking it in the slow cooker. While Jack was napping, I sauteed the onions, peppers and garlic until soft, then added the frozen soy crumbles and brown sugar and cooked until the crumbles were heated through. Tossed that into the crock pot, followed by the beans, stewed tomatoes, spice and V8, then seasoned with liquid smoke, Chipotle Tabasco and seasoned salt.
Cooked on high for 2 hours, low for 2 hours… or you could do low for 8 hours, or high for 4 hours… it really doesn’t matter as long as you make sure there’s enough liquid. Topped with sour cream and cheese.

Corn Muffin Vitatops, on clearance at Target They’re 100 calories and TEN grams of fiber. Holy colon blow. I’m just going to put it out there and say that Brian ate two. They were super sweet- like sweeter than Jiffy Corn Muffin Mix, which is hard to do.
Big plans for tonight: Peas & Thank You’s PB Cookie Dough Balls and Most Eligible Dallas. I know, I know! Such an exciting life I lead. Pics of the cookies tomorrow…
