Hey guys! It’s been kind of a whip of a day… I just got back from a meeting that was supposed to last under an hour, and ended up getting 2+ hours later. And then I had all of this stuff planned to get done while Jack napped this afternoon, but then today when I went to pick him up the teacher informed me that he napped there for the FIRST TIME EVER. Which is good, except for the fact that 45 min nap at MDO = NO nap at home. So it was a looooong afternoon from 2 until Brian got home around 7.
I’d planned on doing a giveaway post tonight but I’m still working out a few details, so that one might be coming on Sunday night instead. So here’s some randomness for you…
My Pinterest boards are overflowing with recipes and ideas to try. There need to be more hours in the day so I can attempt all of this awesomeness.
Greek Yogurt-Covered Strawberries.

How awesome do those look? You just dip the berries in yogurt and freeze. Can it really be that easy? I may be trying these this weekend.

I don’t know about this spiralized beet business, but the dressing sounds pretty fantastic.
Pumpkin Spice Oatmeal in the Slow Cooker

I’ve had the ingredients to make this for a week and tonight may be the night. I’ve had bad luck with slow cooker oats in the past, but maybe, just maybe, this is the one??
And finally, more pumpkin…
4 Ingredient Pumpkin Frozen Yogurt

We finally bought an ice cream freezer a few months ago and I can’t WAIT to try this. It sounds pretty healthy, too- just pumpkin puree, vanilla yogurt, spices and a tiny bit of sugar.
So there you have it: What I’ve been drooling over for the past few weeks. Oh, and I can’t wait to make this, either.
Holiday Stovetop Potpourri

It’s not exactly food, but if you’re like me then scent is a HUGE part of the holiday season. I can’t get enough spice, evergreen, yummy baking smells. I would be ashamed to show you my candle stockpile. But I love the homemade stovetop potpourri idea- there’s even a link at the bottom to show you how to package it as a gift.
And now I must know- what are you all set to make this weekend? Anything exciting?
Hope everyone has a great weekend! Jack and I are headed to the train museum tomorrow, and if that doesn’t lead to a long nap, I don’t know what will…
