We’re having some sleep issues here, to say the least. For the past week or so, Jack has taken FOR-EV-ER to fall asleep at night. Case in point: It’s 11:25pm and Jack is still yelling for me from his crib. Brian put him down over 2 hours ago and rocked him for half an hour… I went in at 10:30 and rocked him for another half hour. He fell asleep in my arms but then immediately woke up when I put him in his crib. UGH. This is beyond frustrating. Good thing we have nothing planned tomorrow morning because it’s probably going to be ugly.

I’ve mentioned before that with both pregnancies I’ve had major citrus cravings. I type this while I sip my raspberry lemonade and a batch of Strawberry Lemonade Bars cools on the counter. See what I mean?

I’ve been wanting to test out this recipe for a while so I figured I would make them for a playdate tomorrow. I’m actually not a huge lemon bar fan, but they just looked so pretty in the picture.

First you use the stand mixer to make the crust (flour, butter, sugar, salt) and press it into a 9×13 pan. Bake for 17 minutes:

Then you combine strawberry puree, fresh lemon juice (FYI, it takes approximately EIGHT lemons to get a cup of lemon juice), lemon zest, sugar, eggs, flour, baking powder and salt in the food processor. Pour this custard-y mixture over the baked crust, then place back in oven for another 20ish minutes. Remove from oven and sprinkle with powdered sugar:

Lovely, right? It’s hard to tell from the pic, but they’re actually a pretty pink color. I wish I could attest to the flavor, but they just came out of the oven and the instructions are pretty adamant about waiting until the pan is COMPLETELY COOL before cutting. So I’ll have to let you know tomorrow. In the meantime, here’s the link to the recipe.

    I feel you on the sleep issues, Heather! Ellie hasn’t gone to bed before 10 in 3 weeks. It is driving me bonkers! :)

    Finally had some time to catch up on your blog! I am glad I did it after eating dinner or all your recipes would make me sooo jealous! I just told my best friend the other day that I kind of want to have another kid just so I can eat all I want during pregnancy and no one will judge =)

    Anyways, I also wanted to let you know I work for Behaven Kids – I am actually their Social Media Specialist as well as Research Assistant and the owner and her daughter wrote a great book for getting your kids to sleep. I use it with my 19 month old and it works wonders, you just have to make sure you are consistent with reading it and making sure the Sleep Fairy comes if he goes right to sleep. I highly recommend it, I have all my friends hooked on it =)
