Hey, so guess what? I actually COOKED tonight! I know! I should start a food blog or something.
I just haven’t been feeling it lately. It’s hot, I can handle about 1 errand per day, and it’s just so much easier to go grab dinner out. It doesn’t help that Brian eagerly pushes the restaurant idea in order to get out of doing the dishes.
Tonight I made this Penne Rosa with Shrimp that everyone and their mom have been pinning on Pinterest. I was intrigued after seeing that the tomato-cream sauce is actually tomato-Greek yogurt. Fresh, healthy ingredients:
Whole wheat orecchiette (the recipe calls for penne but I subbed this instead), diced tomatoes, mushrooms, baby spinach, shrimp, Greek yogurt and marinara.
It’s a fast recipe, once you dice the tomatoes and peel the shrimp. Saute garlic and red pepper flakes in olive oil, then add tomatoes and mushrooms. Throw in the shrimp for a couple of minutes, then the spinach until it wilts. Finally you add the marinara and yogurt and toss with the pasta. Season with salt and pepper (and lots of parmesan, if you’re me).
Good stuff- I love all of the veggies and the fact that it really does seem like you’re eating a cream sauce. Jack liked the pasta, but every time he accidentally got a piece of shrimp, immediately out it came. Fish is okay, but the boy does NOT like shrimp.
This morning Jack and I headed to Whole Foods on Park Lane for their free story & craft time. It’s ADORABLE. They set out all of these wholesome snacks for the kids (Horizon milk, string cheese, Annie’s Bunnies, fruit), then read them a story and have them put together some craft. We went a couple of weeks ago to read Elmer and make this guy:
And then today they read Dog Loves Books and made their own little “book” out of grocery bags. Super cute and they host these every Tuesday- if you have a toddler, I highly recommend it.
Hope everyone is having a good week! I have my 38 week doctor’s appt tomorrow and I’m really excited to have her tell me, yet AGAIN, that I’m not dilating at all. Hooray.
