I’m learning that one of the keys to balancing a toddler and a newborn is preparation. Anything that can possibly be done ahead of time- picking out outfits, packing the diaper bag, meal planning- is a HUGE step towards keeping me (ever so slightly) sane. Breakfast and lunch are hard because I’m preparing Jack’s food while trying to pacify Isla, plus Jack is going through this weird phase (regression?) where he wants me to feed him every bite. By the time both kids are fed and cleaned up, it’s 11 and I just end up scarfing a Luna bar.

I don’t know why it didn’t occur to me before, but my old standby, overnight oats, are kind of the perfect solution to this little predicament… at least at breakfast. I’m still working on lunch.

It’s easy. The night before you combine:

  • 1/2 cup rolled oats
  • 1/2 cup skim milk
  • 1/2 cup plain, fat-free yogurt
  • 1/2 banana, sliced
  • 1 Tbs chia seeds
  • handful of frozen (or fresh) blueberries
  • splash of vanilla

Stir together in a bowl, then cover and place in the fridge. In the morning, top with a drizzle of honey and a sprinkle of granola. You can find a whole bunch of lovely variations on Kath’s page.

It’s perfect because it’s just too hot for regular oats, the morning prep time is about 10 seconds, and oatmeal boosts milk production. Hey hey.

Today Isla had her 1 month appointment, and Little Miss gained a solid pound in 10 days (putting her just NOW at Jack’s birth weight). She was an angel at her appointment, too- didn’t cry at all, let the doctor poke and prod, and didn’t even get offended when the nurse mispronounced her name. Sigh.

Tonight Jenny brought us dinner, a Cowboy Casserole from Central Market:

I don’t know how this is possible given my abiding love for Central Market, but I’d never actually tried one of their casseroles. This one was REALLY good: spiral pasta, grilled chicken, diced chiles, bacon and cheese. Perfect comfort food. Jack cleaned his plate, which never happens (of course I was feeding him every bite… ugh).

Can I tell you how excited I was to spot this at Walgreens today??

I know, I know- total fat kid. I got the Thin Mint flavor, too. Tonight we tried the Samoa and it wasn’t too shabby. The inside is like those sugar wafer cookies, but with caramel and coconut filling.

Holy crap- it’s 9:00, I’m done blogging and the kitchen is clean. Wha??? I don’t even know what to do with myself.
