Thanks for all of the sweet messages today! My gallbladder thanks you. Actually, I haven’t had an “attack” since Friday night, which fortunately (or unfortunately) means that my boring diet is working… thanks to crap like this:
Coconut Milk Creamer < Half & Half. Blech. I like my fatty dairy products.
On the other hand, I used the almond milk in a smoothie this morning and it was actually pretty good. So good, in fact, that Jack drank almost my entire breakfast.
I dusted off the ol’ crock pot this afternoon to try a recipe for Balsamic Chicken (recipe here). It looked promising because it calls for minimal oil and no dairy. Oh, and lots of balsamic vinegar, which I LOVE. You just place chicken breasts in the crock pot (I used frozen) and cover with sliced onions, garlic, diced tomatoes, dried herbs and vinegar. I also threw in some sliced mushrooms.
After 4 hours on high, I shredded the chicken with a fork and served the mixture over whole wheat orecchiette.
I snuck some sauteed swiss chard underneath the chicken. Love the chard.
The flavor was really good- I was worried that 1/2 cup of vinegar might make it too pungent, but it was fine. This would be great over couscous, too.
So the surgeon squeezed me in for an appointment on Thursday, so hopefully I’ll have more info after that.
