Taking It Easy

You know how I was so, so excited to be running again? Well on Friday I was finishing up my run and taking a walk break (one of MANY), and my knee started to feel weird. When I got home it started to swell and it’s been wonky all weekend. Boooooooooo. Not painful, just swollen and uncomfortable. I think it’s runner’s knee- probably because I’m flat footed, running in old shoes and on a banked surface. And because I’m super out of shape, obviously. Anyway, I’ve been taking it easy this weekend and bought a knee strap so we’ll see how it is tomorrow. Oh, and I bought some new shoes- I think my 4th pair of Brooks Adrenaline GTS (they’re amazing if you have flat feet). Jack accompanied me to Luke’s and colored while I shopped:

I had a baby shower to go to today and didn’t get home until almost 6, so I tried to come up with an easy, quick dinner to throw together afterward. Luckily Pinterest came through again with a recipe for Oven-Roasted Sausage, Potatoes and Peppers. It’s a REALLY simple recipe. You toss sliced peppers, onions, sausage (I used turkey kielbasa) and diced potatoes with olive oil and spices (I used rosemary and seasoned salt) and roast in the oven on a big baking sheet. What sucked me in, though, is that before putting the pan in the oven, you top everything with a drained jar of banana peppers.

I ended up roasting mine for a lot longer than the recipe called for- maybe 45 minutes? I wanted the potatoes to be pretty crispy. It turned out really well! It’s simple but not bad for a cheap, super fast meal.

What else can I tell you? Isla pretty much kicked our butts on Friday night by waking up at 2, 4, 6… though she made up for it last night by sleeping from 11:30-6:45.
