Beans & Rice

I made a pretty exciting discovery this morning: The “Alternative Endurance” station on Pandora. I’m too lazy/technology-dumb to figure out how to move my iTunes library from my old computer to the new one, so I’ve been listening to the same playlist on my phone over and over. It’s getting really old, so I used my Pandora app while I ran this morning and found that station under the Workout genre. It’s SO GOOD- Black Keys, Florence and the Machine, MGMT… my only problem with it is that so many of the songs were the same ones from my phone playlist. Apparently Pandora knows me a little too well.

Anyhoo, we actually ventured out of the house today! It’s amazing how many days we stay holed up in here because it’s just a big pain in the ass to go anywhere. Too hot, the double stroller is heavy, Isla hates the car with a fiery passion, etc. I’m a little embarrassed to say that I loaded the kids in the car to drive exactly half a block to Kira’s house. Jack was thrilled to hang out with Luna and Ella, and Isla had fun testing out Belle’s bouncy seat.

For dinner tonight I made a Cheesy Chicken & Rice Bake. If you have brown rice and cooked chicken on hand, you can throw it together in 5 minutes. I cooked the chicken in the crock pot this morning (4 hours on high) and then just used 2 of those steam bags of brown rice.

You stir together rice, chicken, cheese, black beans, corn, green chiles, Greek yogurt and salsa. It was a little bland, so I also added seasoned salt and cumin. Then top with cheese and bake for 25 minutes.

Topped with salsa, lime juice, avocado and chipotle Tabasco:

Good, healthy and lots of leftovers. Can’t beat that.

    So cute! Glad we could get the toddlers and their baby siblings together! That casserole looks amazing, will definitely have to try since I need something easy with these 2. Oh and will have to try that Pandora app, but so annoyed I downsized my data plan on my phone- I’ve heard Pandora will eat up the data if you don’t have unlimited, ugh!
