Cheap Eats

So I’m glad Isla isn’t the only car screamer. Tonight we were on our way home from the grocery store and Jack got really excited because he said that Isla was “playing” in her carseat. I looked back and it seemed like she had JUST, right then, realized that Jack was sitting next to her. She was staring at him and grinning. So maybe that will help with the car drama??? I mean, he is pretty entertaining.

Today we met Jack’s friends Ella & Luna at Northpark. It’s kind of a perfect set up because they both have baby siblings, too, so we can all laugh at the chaos that is our lives now. Like attempting to eat lunch in the food court: I’m trying to nurse a screaming Isla; Jack is demanding that Jenny, who is wearing baby Will in the Ergo, cut up his fruit; Kira is swinging baby Belle in her carseat; and Ella dumps Jenny’s drink all over the table. All at the same time.

How cute are they, though??

I might have made the cheapest dinner ever tonight. I think it cost me a total of maybe $4?

Inspired but yet another Pinterest recipe: Slow Cooker Ham and White Beans. Here’s what I did:

Rinsed a 1lb bag of dried northern beans.

Dumped them in the crockpot, along with a really funky looking ham shank (Super Target had them but you could use diced ham, too). Added 3 cups of chicken broth, 3 cups of water, 2 bay leaves, 1 Tbs dried rosemary, and some garlic salt and pepper.

Cook on low for 8 hours.

Remove ham shank and cut off any meat. Shred the meat and then add it back into the crockpot. Season to taste.

You end up with a really thick bean & ham soup. I actually added a little more chicken broth at the end to thin it out a little. It’s great with crusty bread and a big salad.

    That reminds me of a story my mom has told. We weren’t screaming or anything, but my older brother JACK (+21 months) and I were sitting in the backseat of our family Volvo kind of playing and cooing and stuff for awhile – we were on a trip to Eugene to visit Grandma. Mom said that after awhile she realized we were completely silent and upon checking the sitch she noticed we were just sitting there holding hands :)
