A Couple of Winners

I just got home from a much needed mom’s night out at Park Tavern. Unfortunately Isla decided to refuse a bottle tonight (?) so I’m about to feed her, but FIRST I have some good recipes for you!!

Last night we tried a super easy, one pot recipe that I found in the most recent Whole Foods flyer, of all places. You basically saute onion, sage and turkey kielbasa in a pot, then add in quinoa, hard cider, cranberries and water (I used chicken broth). Simmer for a while then throw in some chopped kale.

I honestly didn’t have high hopes for this one, but it turned out great! The cider gives it a nice sweetness (even Jack liked it). Brian recommended using a saltier sausage next time but I thought it was fine as is. I love that you get your carb + protein + veggies all in one pot, and the cleanup is a breeze. Next up: Cake Batter Chocolate Chip Cookies.

I can’t stop eating these!! They’re just like standard chocolate chip cookies except that you use yellow cake mix for part of the flour… oh, and throw in a half cup of sprinkles, too. The recipe calls for a combination of white chocolate and semi-sweet, but I skipped the white chocolate because I’m not a fan.

So there are a couple of good recipes for you to try!! One super healthy and one… not so much. Isla’s giving me hungry eyes so I better run.

    I made that dish and hated it. The turkey kielbasa I get from TJs and usually love was just awful in this. My MIL who had it over at my house made it later with different sausage and said it was way better. I may have to try again.
