This is a busy week for us- Arboretum Monday, then school Tues/Thurs and MOPs Friday- so today I decided that we would just lay low and hang out at home… which always sounds like a good idea until Jack’s been awake for an hour and the house looks like a bomb went off. Luckily my mom came to the rescue and invited us to meet her for lunch. We were pulling out of the driveway when I saw a random cat dart across our driveway.

Me: “Jack, look at that cat!”

Jack: “It’s not a cat, Mommy. It’s a jaguar.”

What?? I have no idea where he gets this stuff. And for the record, it was not a jaguar. We do have coyotes; if I see a jaguar, the house goes on the market immediately.

For dinner tonight I finally put this to use:

Trader Joe’s Masala Simmer Sauce. I actually cooked the chicken ahead of time in the crock pot (so I could pull some out for Jack’s dinner- the sauce was too spicy for him). Then I tossed the shredded chicken in a saute pan with the simmer sauce, a handful of frozen peas and some chickpeas. The pan seemed a little dry once I added all of that extra “stuff” so I also poured in about 1/2 cup of light coconut milk.

Served over cauliflower rice:

I’m itching for another TJ’s trip soon. I hear they have pumpkin butter now!!! Maybe this weekend?

    The funniest thing I think Jack has said lately was a few days ago when we all met at the arboretum because you had a dead battery in your car. The men were over at your car working on it and you, the kids and I were sitting in your Dad’s car with the engine running trying to keep cool. After about 15 minute of just sitting there with the engine running, Jack says, “Mommy, are we nearly there yet???” I loved it!
