Hiding Out

Brian is having a guy’s poker night at our house so right now I’m hiding out in our bedroom, watching the debate and tackling this pile:

I subscribe to wayyyyyy too many magazines and I don’t really have time to read any of them anymore… meaning that they are quickly taking over our house.

Last night I threw together a dessert for book club: Nutella Gooey Butter Cake. I’m a huge fan of pumpkin gooey butter cake, and obviously Nutella is a gift from God, so of course I had to try this one. Can I tell you that it involves an entire CUP of Nutella?? That’s a lot.

Pre baking:

I didn’t get any photos once it came out of the oven, but I would compare this to an under-baked (in a REALLY good way) brownie. The bottom crust is firm and chewy, but the Nutella-cream cheese topping stays soft. Give it a try.

Jack had Mother’s Day Out today and I spent the entire morning cleaning. In order to prevent him from completely undoing all of my efforts, I took him to Monster Yogurt after school to play on their playground, and then after nap I gave him a package of gel window clings (thank you, Target dollar bins!) to help me “decorate” for Halloween.

Baby sister supervised.

Best $1 ever spent, I tell ya.

    OMG, nutella gooey butter cake? Will will die. Gooey butter cake is his fave – my mother-in-law makes an awesome blueberry one, while my sis-in-law makes a heath bar version. Both are crazy good. Will could live off nutella so we may have to try this for his birthday on Monday!

    I also thought of you last night. I made the Pinterest OMG Chicken (aka Hellman’s parmesan chicken recipe), which I know you’ve done in the greek yogurt variation and also with fish. However, I did a variation I thought you would like!!! :)

    I cooked the chicken according to the OMG Chicken recipe. Once it was done, I took some Rao’s arrabiatta sauce (my fave jarred marinara – looky here: http://www.raos.com/AR24-case.aspx), spread it on a plate, placed the chicken on top of the sauce, and then laid a slice of Sargento thin-sliced provolone on top (only 40 cals per slice! yay! ta-da: http://www.sargento.com/products/220/sargento-ultra-thin-sliced-provolone-cheese/ ). I then put the chicken back in the oven so the cheese would melt over the chicken and brown a bit. Voila, chicken parm, served right up with your lovely roasted broccoli. Super easy!
