Cut the Mustard

Oops, I did it again. ANOTHER Trader Joe’s trip. What is wrong with me??? The problem is that each time I go, I find yet another item that I can’t live without… which then necessitates more trips. I’ll be so happy when one of the Dallas locations finally opens and I don’t have to make the hike to Plano. Today’s big finds were:

Reduced-guilt guacamole (thanks yet again, Kate!), made with Greek yogurt. Only 30 calories per serving! It’s addictive.

Also pumpkin spice tea:

I’m not a huge tea drinker but I’m trying to find something to sip on at night to keep from snacking.

Also- Halloween Joe-Joe’s. For Jack, of course.

I found a really great weeknight dinner recipe! It’s all over Pinterest: Maple Dijon Chicken. Here’s what you do… it’s very complicated. Whisk together 1/2 cup dijon mustard, 1/4 cup maple syrup and 1 Tbs red wine vinegar. Pour over 1 lb of chicken breasts (I actually had 2 lbs so I doubled the sauce). Sprinkle on rosemary. Bake at 400 for 30 minutes. Done.

As you can see, I used a really coarse dijon, and the mustard flavor was pretty mild. I’m guessing that if you used a less “seedy” version (like Grey Poupon) it would come across a lot stronger. Anyway, Brian and Jack really liked this, and I couldn’t stop dipping my spoon in the extra mustard sauce- which, by the way, was excellent over brown rice.
