I tried TWO new recipes tonight. What’s gotten into me?? First was Pioneer Woman’s Sour Cream Noodle Bake. For some reason I’ve been all about the pasta lately. I think it’s because the temps have finally dropped below 80 degrees here in TX and cheesy pasta dishes sound pretty perfect. The only changes I made to this recipe were using extra lean ground turkey instead of beef, and I also threw a can of mushrooms (drained) into the meat/tomato sauce mixture. To lighten it up, I used 1% cottage cheese, 2% cheddar and reduced fat sour cream, too.
Anything involving pasta, cheese and sour cream is going to be a winner in my book. Don’t forget to add lots of pepper (as instructed in the recipe) and DON’T leave out the green onions, because they’re awesome.
Brian and I loved this. Jack was being stubborn and refused to eat anything, but I really think he would’ve liked it if he had given it a chance.
Every time I go to Trader Joe’s, I buy a giant bag of chopped kale and a bag of shredded brussels sprouts… and half the time I can’t think of anything to make with them so they make my fridge stinky and get tossed. My idea is to use the kale for kale chips, but it’s actually not ideal because the bag always contains a lot of ribs and I’m too lazy to pick them out. SOOO, I was really excited to find this recipe for Kale and Brussels Sprouts Salad. It’s crazy easy if you buy that bag of shredded sprouts at TJ’s.
Simple and delicious. The greens were surprisingly tender, and I loved the sweetness of the dressing. I used an extra tablespoon of red wine vinegar and also drizzled orange champagne vinegar over the top of my serving. Brian suggested adding dried cherries, and seeing as we have a giant 5 lb bag of them in our pantry (from my parents’ trip to MI), I might just try that. I also like that, since the kale and sprouts are “hearty,” you can keep the salad in your fridge for a few days.
Jack is driving me crazy with this picky eating business. Like I really REALLY wanted to go get frozen yogurt tonight… but then he refuses to eat his dinner and it’s not like we can then reward him with a big bowl of fro yo. Dammit. My life is so hard.
