Soup For You

I just got home from book club so no dinner recipe for you tonight. I’m not sure if I mentioned it already, but this month we read Where’d You Go, Bernadette. Such a great pick! The author used to write for Arrested Development (one of our faves) and the book had the same quirky sense of humor. Loved it.

I do have a mini product review for you, though! You’re going to be so shocked to hear where it’s from: Trader Joe’s. I KNOW. Crazy.

I’m always looking for quick lunch ideas. Usually I’m in a rush to eat between making Jack’s lunch and Isla waking up from her nap, so fast and low-mess is ideal. I’ve been craving Thai lately so I was excited to grab this out of the freezer case at TJ’s:

The bag serves one and comes with a packet of frozen broth/soup, a packet of spinach-mushroom wontons, and a “spice packet” of lemongrass, chiles and some kind of leaf (basil? bay? not sure). You just dump it all in a bowl and microwave for 5 minutes.

Okay, so I liked the broth. It was tangy, creamy (coconut milk) and had great flavor. I LOVED the wontons. Seriously I wish they would just sell these on their own because they were awwwwwesome.

I did not like the excessive amount of lemongrass. I appreciate the flavor it gives the broth, but then it needs to come OUT. There’s a lot in there (as in, my entire house smelled like a candle). It’s sliced into tiny pieces and they’re really hard to remove, meaning you end up with mouthfuls of this tough, fibrous mess. Yuck. See? A lot.

And that’s what I managed to actually pick out with the spoon. The rest is still wedged in between my teeth. So maybe next time I’ll skip the spice packet?

Look at my little Squish. My mom watched the kids this afternoon and apparently Isla decided that a 20 minutes nap was sufficient… as soon as I got home and fed her, she passed out on the Boppy. I couldn’t bring myself to move her.

Sweet baby girl. Love that face.
