Last night before I went to bed, Brian informed me that we were supposed to get snow overnight. I was all, “Yeah right. Won’t happen.”
Annnnnd then fast forward to 6am when I’m trying to nurse Isla back to sleep and the dog is going apeshit because it is THUNDERSNOWING outside (it’s a thing, I swear).
I’m over this cold business. Over. It.
Isla and I had a really exciting day while Jack was at school. I was planning to get a flu shot while with Jack or Isla at their checkups, but apparently the pediatrician’s office was running low and wasn’t able to offer shots to parents. Last night the cashier at Walgreens informed me that they had the shots in stock so we headed there this morning. But no, all of their shots were reserved for people on a waiting list. Eeeek. My general practitioner was out, too. So guess who came to the rescue?? Target. Of course they did… 2 shots left. This flu stuff is freaking me out.
Okay, so… food. Yet another crock pot recipe! Yea!! It’s a good one, too: Thai Pork with Peanut Sauce. Bell peppers, pork tenderloin, garlic, teriyaki sauce, rice vinegar and red pepper flakes, cooked on high for 4 hours (or low for 8). Then you remove the pork, shred it, whisk peanut butter into the “sauce” and then add the pork back to the crock pot. I thought it was a little salty but that’s probably because we could only find a 1 1/2 lb pork tenderloin when the recipe called for 2 lbs. Next time I might add more rice vinegar, too.
Brian and I had ours over cauliflower rice because we’re trying to cut down on carbs at night. We both really liked the pork so I’ll be making it again soon!!

I’ve been trying to get back into running. I really miss it- the time alone, the energy/mood boost, spending time outside, all of it. My sweet mom came over and watched the kids this afternoon so I could go out for a quick run and I ended up doing a mile and a half more than I originally planned. But now it’s glaringly obvious how sad and out of shape I am because I’m tired and already super sore. Pathetic.
