The kids and I had a fun day- our PTA rented out Jump Street (indoor trampoline park) for an hour, so we headed there this morning so Jack could bounce off some energy. It was a little crazy but he had a blast and, miracle of miracles, didn’t even throw a fit when it was time to leave! Holla!
Tonight we met our friends Kira, Todd, Luna and Belle for dinner at Nazca Kitchen. Jack LOVES Luna and was super excited to see her. He asked if she could come home with us after dinner… and Belle and Isla had a little baby convo across the table.
I had the fish tacos again, this time one on butter lettuce and one on a tortilla. Also butternut squash on the side.
YUM. Everything on the menu sounds really good but I’m going to have a hard time straying from the tacos.
Tonight I’m attempting these Oatmeal Banana Breakfast Muffins. I like the ingredient list- oatmeal, bananas, Greek yogurt, eggs and sugar. No flour. You just throw everything into the food processor and give it a whirl:
The sides kind of puff up like mini souffles and they look a little odd right out of the oven.
They’re still cooling so I haven’t tried them yet, but I’ll give you a report tomorrow! Hope everyone had a happy Monday!
