Crazy for Coconut

Today we had a miraculous morning- no rushing around; Isla slept late enough (I mean, after getting up at 2 and 6am to eat) that I could get Jack and I up, fed and dressed; then we actually managed to make it to open gym time at the rec center relatively on time so Jack got to play with friends and burn off some energy. Nice!

We ended up grabbing lunch at Cedar’s with Jack’s buddies, Luna and Alejandro, after the rec center. Man, I think that’s the third time I’ve eaten there in a week. Love me some Mediterranean food. Anyway, Jack was a holy terror at lunch. We are having a “hitting” issue (just me- not his friends or his sister, thankfully) and I’m struggling with how to nip THAT in the bud. It’s so out of character for him.

Ugh. When Brian got home I went for a nice- though freezing and crazy windy- run to burn off some of that mommy frustration. It helped. A lot. Maybe I should have Jack make a few laps around the block to get out his toddler aggression?

Dinner was simple but delicious. First of all, my new obsession? Vegetables roasted in coconut oil. I made kale chips with coconut oil last week and they were insane. Then tonight I drizzled broccoli with a Tbs of coconut oil before roasting (and then topped with lemon juice) and Jack had THREE servings. Here’s my theory- since coconut oil is a solid at room temp, when you melt it in the microwave then pour over vegetables, it coats them and then solidifies a little as it cools, so you get more even oil distribution on each piece. Also, it tastes awesome. It seems like coconut + broccoli would be awful, but it just gives it a little richness.

For our main course, I made a bolognese out of lean ground turkey, sauteed veggies (onion, celery, carrots and mushrooms), jarred marinara and coconut milk. It was loosely based on a recipe out of Practical Paleo. Brian and I had ours over spaghetti squash and Jack had his over penne.

You know who is hilarious? This gal. She is sooo different from her brother. He was such a laid back baby, but she is one determined little squish. If she wants something, she just goes right for it. I almost dropped her the other day when she lunged for my drink, then today at lunch she grabbed my (heavy) plate and tried to fling it across the table. She has crazy baby strongs. I’m a little scared of her.

She is small but mighty, that’s for sure.  I love it.

    What the heck? Owen is in a hitting me phase too–not cool. If he could only see what he has done to my body after carrying him for nine months! Loved Kira’s blog about the hitting pillow.
