Has anyone else noticed how amazing the Target dollar bins have been lately?? The other day I picked up a super cute spring-y gingham bow tie for Jack, a ton of stuff for the kids’ Easter baskets, and then today I found these sunglasses:
He’s so handsome. $1 for the kid glasses (came in several colors) and $3 for the adult version. I’m constantly losing my sunglasses- plus having a grabby baby- so these are perfect to have on hand. What what.
I also found this sweet yarn Easter tree that I’ve been stalking for a while:
I should probably take down our Valentine decor before I focus on Easter, huh?
Tonight I tried this recipe for Baked Artichoke Chicken. Look how pretty it is:
I loved the veggies (artichokes, mushrooms and onions) and it’s a really simple recipe to assemble, but next time I’ll do a better job of seasoning… despite containing mustard, wine, vinegar, olive oil, garlic and spices, the sauce was a little bland. I need to play around with it a little.
Over cauliflower rice:
I’ve been using bone-in breasts and thighs lately. It’s kind of a pain in the butt to pick around the bones but the meat does stay a lot more moist and tender.
Alright, enough chicken talk. Night!

Yum! Your recipes are really inspring me to get back into cooking. I’ve been relying too much on the same dish, over and over again.
