So the first day of school went amazingly well!! Look at these sweet babies:
Jack was thrilled to see his buddies, and Isla didn’t shed a single tear when we took her to her classroom (I, on the other hand…). Her teacher texted me pics throughout the day it looked like she was having a blast! Apparently the only time she got mad was when they tried to put her down for a nap. Girlfriend wanted to PLAY.
It was pretty amazing how those 5 hours flew by. I went for a run, picked up around the house, took a shower (without having to bring the monitor into the bathroom! What what!), met my mom for lunch, ran an errand and then it was time for pick up.
Soooo I was up until 1:30am working on “my family” collages for the kids’ classrooms. Good lord, it starts already. Brian worked a little late tonight, so between being exhausted and not having back-up, I opted to throw these in the oven for the kids’ dinner:
Trader Joe’s Tofu-Edamame Nuggets. They’re pretty darn good- kind of a savory, Asian-flavored chicken nugget type thing. Great description, right? Anyway, I looked them up online and found this review… interesting because the nutrition info is FAR different on my bag. The serving size is 4 nuggets for 220 cals and 16 g fat (NOT 5 nuggets for 200 cal/10g fat like in the pic). I’m okay with it though because it’s impossible to get the kids to eat protein and they actually seemed to like these.
Brian and I had sauteed brussels sprouts with chicken sausage and Laughing Cow wedges (basically this recipe but with plain LC):
