I’m constantly trying to find things that Isla will actually eat. Here’s a short list of her dislikes: eggs, cheese, toast, pancakes, milk, hot dogs, deli meat, avocado, beans, ground turkey, tomatoes, steak, waffles, peanut butter, jelly, bread, hummus, peas, corn, rice, carrots. It’s probably easier to tell you what she WILL eat: Chick Fil A nuggets, fruit, yogurt and the occasional tortilla. Oh, and french fries. I’m thrilled when I find anything new that she actually seems to like, so the wheels started turning as soon as I got her to take a bite of pumpkin bread at Starbucks without immediately spitting it out.
Pumpkin!! She likes pumpkin! I can work with this.
We met my parents for dinner tonight but had an hour to kill beforehand, so I whipped up a batch of these paleo pumpkin cookies from one of my fave blogs. The ingredient list is solid- pumpkin, almond meal, nut butter (I used sunflower seed butter), egg, a little coconut sugar, pumpkin pie spice and vanilla. Of course I negated the healthiness by adding chocolate chips:
They taste like a combination of PB cookies and pumpkin bread. So good! I tried to “smoosh” mine down with a glass as the recipe directs, but the dough was too sticky- so my cookies are little pillows instead. Both kids liked them, and I loved that they have protein and healthy fats.
(Does it shock you that it took this long for me to post a pumpkin recipe? It has been fall for two whole days, after all.)
