Whole 30: Day 1

So Day 1 of Whole 30 down. I feel pretty good, just sleeeeeeepy. You’re supposed to cut off any caffeine at noon, so I’m definitely missing my afternoon coffee break (and multiple Diet Cokes, obviously). I can already tell that the hardest part of this plan is going to be the cooking. SO MUCH FREAKING COOKING. We ran the dishwasher twice today!! I’m not used to “cooking” breakfast (usually just do fruit & yogurt), plus I had to cook 2 lunches and 2 dinners since the kids won’t touch what we’re eating. Actually, they may have eaten Chick Fil A for dinner tonight.

Other than that, the actual food part was fine. I’m trying to be more of an egg person when it comes to breakfast. They’re not really my thang, but they’re easy and versatile. So on to the meals:

Breakfast: Scrambled eggs with mushrooms and broccoli slaw, diced avocado, mango and strawberries.

I made three eggs but really should have gone with 2. That’s a lot of eggs. Also? I miss ketchup.

Lunch: Trader Joe’s Healthy 8 Veggie Medley with diced avocado, grape tomatoes, tuna and Tessamae’s Lemon Garlic dressing.

Snack: Apple slices sprinkled with cinnamon, dipped in almond butter with coconut shavings (SO GOOD).

Dinner: Italian fajitas with bruschetta from Primal Cravings, roasted broccoli, baked sweet potato.

I stayed pretty full all day, except that I did get hungry an hour or so after lunch. It’s a weird transition going from thinking low-fat/low-cal and then all of a sudden eating entire avocados and cooking everything in coconut oil and ghee. I REALLY like not having to count calories or measure portions. So far no sugar cravings, knock on wood. I was super tired this afternoon and napped while the kids napped. Hopefully the tiredness will pass soon- especially if I can get my butt in bed at a decent hour.

ALSO- check this out! Cherry Lime La Croix. So good! My friend Kira tipped me off to it and I rushed to Target tonight to buy a case of my own, but they were already sold out. BOOOOO. It’s up there with the coconut flavor (maybe better?).

Okay, well hopefully I haven’t bored y’all to tears. Thanks for all of the comments today- I love hearing any tips for getting through these next 30 (29!) days.

    Sounds like an interesting experiment … I need to Google it. Is it paleo-based? Your meals all look delicious.

      Hey Rose! Yes, it’s basically a really strict version of paleo- meats, veggies, fruits, nuts. No processed foods, sugar, legumes, grains or dairy for 30 days, then you gradually start reintroducing those foods back into your diet.
