Monday again! I was up way too late last night and 6am came EARLY. Does anyone else get this crazy second wind (I just typed “wine”- haha) around 10pm? I’m dragging all day, and then the kids go to bed and I’m wired and ready to clean out the fridge and watch 5 straight episodes of New Girl on Netflix. It’s ridiculous.
Anyway, got the kids off to school and was really tempted to crawl back into bed for a little snooze BUT I chugged some coffee and forced myself out the door for a run instead. I’ve been running a lot lately and it’s been good & bad. Good because I have a million times more energy and am generally a nicer person… bad because I am sooooo out of shape.
Has anyone read the September issue of Real Simple? There are a ton of great recipes this month! Usually I’m kind of meh on their stuff but this time I dog-eared basically every page in the cooking section. This morning I threw a roast in the crock pot for their Slow Cooker Asian Shredded Beef. It’s so easy- no browning the meat! I made a few alterations: substituted ground ginger for fresh (forgot to buy some last night at the store), reduced the amount of crushed red pepper (to make it more kid-friendly), and tossed some fresh broccoli into the crock pot about 30 minutes before the timer went off. Once the meat was done, I removed the roast from the slow cooker and shredded it. Moved the cooked broccoli into a separate bowl so it wouldn’t get mushy, then added the shredded meat back into the crock pot.
Served over rice noodles with a quick cucumber salad. The recipe calls for radishes and scallions for garnish but I skipped those.
So good! Jack and Brian both loved it. Isla ate plain rice noodles and yogurt. Whatever.
I’m doing Kids in the Kitchen with Isla’s class tomorrow, so I need to go make a vat of blue jello tonight in preparation (pics to come). OH and check out this awesome video from the American Heart Association. Great message about limiting sugar… and you might just recognize a few cute kiddos:
