Burrito Bowls

I feel like a zombie today. Isla made her way into our bed at some point during the night and spent the next few hours alternating between kicking the crap out of me and using me as a pillow. I was honestly up from 4-6:30 dodging kicks, shielding Chloe, and at one particularly fun point around 5am, attempting to hunt down and kill a FRUIT FLY in the bathroom so that Isla could go potty. And of course I (stupidly) stayed up until midnight catching up on Scandal last night. So apologies to anyone who saw me today because it was not pretty.

Dinner tonight was paleo(ish) burrito bowls made from whatever I could find in the fridge/freezer/pantry. I unearthed a bag of frozen cauliflower rice and sauteed that in some olive oil with a bunch of spices. Next was sauteed bell pepper strips (another freezer find!) seasoned with a little soy sauce and seasoned salt. Last was a lb of ground turkey, browned with an onion and tossed with a can of diced green chiles and this Frontera taco sauce:

Layered the cauli rice, peppers, turkey, shredded cheese, guacamole, diced tomatoes, shredded lettuce and some jalapenos:

Not bad for the most thrown-together meal ever! I really need to shop my freezer and pantry more often.

Here’s hoping for a less eventful night…
