Happy almost Friday! Despite the short week, I am READY for the weekend. Soccer starts back up for both kids on Saturday, so we’re looking at 2 games… plus 2 kid birthday parties, 1 adult party, 1 back to school picnic and 1 Cowboy game (for Brian, not me). Busy weekend!
I had a package of ground turkey in the fridge that needed to be cooked, so for dinner tonight I made turkey-black bean taco salad. For seasoning I used one of those Frontera sauce packets. They’re definitely a fave. You just brown the turkey with a chopped onion, then dump in the packet and heat through. I also added a can of black beans to the turkey mixture:
Butter lettuce topped with taco meat, avocado, tomatoes, cheese, greek yogurt, salsa and jalapenos. I also crumbled some blue corn chips on top.
Sorry for the short post, but it’s almost 10 and I still need to figure out how to set up the kids’ lunch accounts online. Three weeks into school and they’re both coming home with mostly uneaten lunches (ugh whyyyyyyyy) so we’re going to give cafeteria pizza day a try.
