Fake Friday

Today really felt like a Friday, probably because it started out with brunch and mimosas at Dream Cafe with some of my favorite people. Happy Birthday Allison!!

The rest of the day was much less exciting. I did a bunch of chores, picked the kids up from school, headed back to the school for an auction meeting, then met up with Brian and the kids for dinner.

I’ve rekindled my love for Trader Joe’s carrot noodles. Yesterday I was craving pasta for lunch and pulled a box out of the freezer. Sauteed them for a few minutes in a skillet, then added marinara and a spoonful of pesto (I buy the big vat of pesto at Costco and inevitably throw a 3/4 full jar away when it expires 2 months later… womp womp). We had some leftover rotisserie chicken so I threw that on top too. Perfect lunch!!

I’m hosting book club next month and chose The Couple Next Door. HOLY MOLY. I started it two nights ago and will probably finish tonight. It’s a short read but I can’t put it down! Like, I really want to get these dang lunches fixed NOW so I can go finish it. Hopefully the ending holds up to the rest of the book!
