Today was our usual crazy Monday. I went to the gym this morning, then to Costco/Trader Joe’s/Target (wouldn’t it be great to be able to get everything at ONE store??), home to unload groceries and clean out the fridge, picked up the kids at school, fed them dinner and helped with homework, took Jack to soccer, then home to eat MY dinner. And now it’s nine o’clock. And notice no mention of a shower in there, so that’s nice. I just don’t have it in me to do the whole hair and makeup thing when I’m going to be sweating it out at soccer for an hour and a half… and it’s still 90+ degrees here in Dallas. C’mon fall…
I bookmark a ton of recipes on my iPad via Bloglovin. I think I have close to 600 stored on there now, soooo things tend to get buried. I was flipping through them today and stumbled across this Skinnytaste “recipe” (it’s so simple I can barely call it that!) for lentil bowls with avocado, eggs and Cholula. We always have hard boiled eggs from Costco in our fridge, and I usually have tomatoes, avocados and hot sauce on hand too. I grabbed a package of pre-cooked lentils from Trader Joe’s and had lunch ready in less than 5 minutes!
We didn’t have Cholula, so I used Frank’s Red Hot instead. I sprinkled on some red wine vinegar and extra lime juice as well. SO easy and filling, thanks to all of the protein and fiber. And it’s pretty, too. Obviously very important.
So I think I have lunch covered for the rest of the week! Catch y’all tomorrow!
