Squish, Squash, and Meatballs

I just went into the den to get Isla so we could study for her math test tomorrow (YEP, math test in kindergarten…) and found this:

Sweet girl. She passed out in the car last night on the way home from dinner, too. Apparently she’s still recovering from last weekend’s camp out.

We only had about an hour between ballet and Jack’s cub scout meeting tonight, so I made a super quick dinner. These quinoa kale turkey meatballs have caught my eye a few times at Target and I finally snagged a bag:

The ingredient list is actually pretty impressive…

I just dumped the meatballs (still frozen) in the Instant Pot, topped with that jar of marinara sauce, then set on “Meat/Stew” for 12 minutes. Once the timer went off, I let the pot naturally release for about 10 minutes, then did a quick release.

While the meatballs were cooking, I boiled some pasta, heated up garlic bread and steamed a bag of broccoli in the microwave. Isla won’t touch meatballs, so I used the Barilla Plus pasta to get her a little more protein.

I skipped the pasta and used butternut squash “noodles” instead.

Those meatballs are pretty darn good! Frozen meatballs are so hit or miss, but these are a winner- especially for crazy school nights.
