Buffalo Chicken Casserole

Well today was definitely a freaking MONDAY. I woke up not feeling great (stuffy, sore throat), and then at around 10 the school nurse called me to say that Isla had thrown up in the classroom. I picked her up and she seemed to be doing ok, so I got her settled in on the couch with some blankets, saltines and ginger ale… and Chloe, who is always excited for a lazy couch buddy:

She seemed pretty perky until it was time to go pick up Jack at school. In the car she complained about her head hurting (and also about my driving, ha). As soon as I pulled into the school parking lot, she started throwing up in the backseat. Luckily we thought to bring a Target bag so there wasn’t a huge mess. Anyway, that was fun to roll up at carpool with a giant bag of vom in my front seat.

No more throwing up since then, thank goodness. She took a 3 hour nap when we got home, drank some more ginger ale, and now she’s in bed for the night. Fingers crossed that the worst is over! I’m really bummed for her because tomorrow is pajama day at school and she’s going to have to miss it, but I guess better safe than sorry?

I have something to go to tomorrow night, so I tried to make a dinner that we could eat for 2 nights: Buffalo Chicken Casserole. It’s a pretty simple. Target was out of rotisserie chickens so I ended up just cooking a few chicken breasts in the Instant Pot for 15 minutes and shredding them. Then you just roast cauliflower florets in the oven, mix them with shredded chicken, top with a mixture of cream cheese/buffalo sauce/ranch/green onions, then sprinkle with cheese and bake.

It was really good! Super rich. It literally tastes just like buffalo chicken dip mixed with cauliflower… so if you like that dip (and this girl does), you’ll be a fan.

Hope all of you are staying well! Between strep before Christmas and now whatever this is, poor Isla has been through the wringer this season. She actually told the school nurse that she’s pretty sure that, “all of the vitamins my mom made me take this morning made me sick.” Omg, I can’t win.
