I think this may be the most I’ve ever watched of any Superbowl. And by “watched” I mean, “sat on the couch playing on my phone until commercial breaks.” And ate snacks, obviously. Our little keto app plate:
This weekend was pretty uneventful. Oh but Isla did lose her first tooth!!
It’s been wiggling for a while, and tonight she just yanked it right out on her own.
We let the kids have a pizza and movie night last night (we were pushing for Cars 3… but they picked Nine Lives, which is honestly just as bad as you’d expect). We ordered pizza for the kids, but I finally tried making the fat head dough for us. It’s really simple- just almond meal, mozzarella, cream cheese, egg and Italian seasoning:
You microwave the cheeses and almond flour, then stir in the egg and spices. Form into a ball, then roll out into a crust between 2 pieces of parchment.
You bake the crust for about 12 minutes. Mine got a little charred on one side because I didn’t roll it out super evenly. Topped the baked crust with these:
And then baked for another 5 minutes.
It was actually really good! It tasted like a standard thin-crust pizza. Last week I tried this low carb, high protein frozen pizza (Real Good brand) and it was HORRIBLE. The crust is made from chicken, so that should have given me a clue. It was just weird. Anyway, I was nervous about this one… but it turned out great!
Ugh it’s late and I’m realizing that I still need to return emails AND put clean sheets on our bed. Sunday nights are so fun.
