3 Ingredient Chicken

I have to say, it was really nice not to have to be up and going early this AM! The kids both slept in until 8 (late for them!). Then I took them to see Peter Rabbit. It was cute but I think I’ve been spoiled with really good kids’ movies lately. It’s definitely more slapstick than clever… but of course the kids thought it was HILARIOUS. After that we met Brian for lunch, walked around the mall for a little while, Target run for groceries, then home. It rained this AM but then was so nice out the rest of the day- I’m ready for spring break!

For dinner tonight I made this parmesan-mayonnaise chicken that Haute & Humid posted about today. It’s ridiculously easy- you just stir together mayonnaise and parmesan (and I added garlic powder), spread on top of chicken and bake. That’s it. It’s low carb/keto AND kid-friendly, which is always a win.

FYI: Trader Joe’s mayo is a recent fave- it’s not sweet at all and only contains eggs, canola oil, lemon juice, apple cider vinegar and spices.

I crowded the pan a little, so there was a lot of extra liquid and the tops didn’t brown as much as I would have liked:

So once Brian got home, I moved our servings from the glass Pyrex to a metal baking pan and put it under the broiler for a minute or two. That made a HUGE difference. The topping was crispy and perfect. Super flavorful.

(Served with Jack’s leftover steamed brussels sprouts, because by the time Brian got home it was like 7:20 and I was DONE. I’m out of practice at entertaining/refereeing these 2 allllll dayyyy lonnng #somanyfights #andmesses. Isla dropped not one but TWO full root beers during Peter Rabbit today… which caused me to inadvertently whisper-yell “SHIT!!” in the middle of the children’s movie. So that was fun.)
