Well, summer has officially started but we have a busy couple of weeks ahead! Jack and Isla both started swimming lessons today, so they’ll have those M-Th for the next 2 weeks. This week Jack also has Twilight Camp for Boy Scouts. He told me today how excited he is to see his friends (since it’s been a whole three days, ha). We did make a quick trip to the lake this weekend. It doesn’t really seem like summer until we kick it off there.
So that’s what we’ve been up to!
Tonight I made a definite keeper recipe: Skinnytaste shrimp scampi foil packs. As soon as I saw this one I knew I needed to make it ASAP. You marinate shrimp in olive oil, salt and lots of garlic. Then you place the shrimp on a piece of foil and top with MORE garlic, lemon juice, white wine, butter and red pepper flakes. I added a few spoonfuls of capers to each of my foil packs, too. Fold up the packets, bake for 10 minutes (I actually did 12) and that’s IT.
This would be awesome over orzo or couscous. I was trying to cut the carbs a little (womp womp) so we had ours over mashed cauliflower, and Brazi Bites on the side. The sauce/juice is soooooo good.
Our house reeks of garlic now but it was totally worth it. Catch y’all tomorrow!
